Easy Chicken Leftovers Quiche
The beauty of a quiche is its flexibility. It’s the perfect dish to use up leftovers while creating a fantastic meal.
Ingredients
- Puff Pastry – 200gr (1 Roll)
- Chicken – 200gr (Already Cooked)
- Roasted Vegetables – 150gr (e.g. carrots, bell peppers, onions, mushrooms)
- Tofu – 100gr
- Onions – 2 (Medium)
- Garlic – 2 Cloves
- Olive Oil – To Taste
- Eggs – 3 L
- Heavy Cream – 150ml
- Gouda Cheese – 100gr (Grated)
- Parmesan Cheese – 50gr
- Oregano – A Pinch
- Pepper – A Pinch
- Sal – A Pinch
Directions
- Preheat the oven to 200ºC and line a tart pan with the puff pastry, then poke the bottom with a fork.
- Begin by quickly sautéing chopped onions and garlic in a frying pan with a drizzle of olive oil. While they sizzle, shred the cooked chicken into small pieces and chop the roasted vegetables into small pieces.
- Once the onions and garlic turn golden, remove them from the pan and combine with the chicken and roasted veggies in the tart pan.
- Cut the tofu into small cubes and sprinkle it over the vegetables.
- Mix the eggs and heavy cream with a pinch of salt and pepper. Whisk well (if you’re in a rush like me, use a tall bowl and a hand blender for a quick mix), then pour this mixture over the ingredients in the tart pan.
- Place the Gouda cheese pieces on top, followed by a generous grating of Parmesan cheese and a pinch of pepper. Bake in the oven for about 35-40 minutes until it turns a lovely golden color. Bon Appétit!
