Butter cookies, originating from Denmark, are beloved for their delightful mix of butter, flour, and sugar. With a crisp texture from ample butter and sugar, they often require chilling to ensure proper handling.

These cookies, often associated with Christmas and Valentine’s Day, are also highly popular during Chinese New Year in Hong Kong. I’ve gone the extra mile, shaping these traditional cookies into cute Hello Kitty forms as a sweet gesture for my girlfriend. But don’t worry, these delectable treats are just as delicious in any shape or size!

The key to maintaining the shapes of these cookies is refrigerating the dough, don’t rush, you need to keep the dough always as cool as possible. This helps the butter solidify and retain the shapes during baking, let’s check the recipe!

Perfect sweet for any occasion, just get a cute mold and you can make a bunch of delicious crispy yum yums (=ↀωↀ=)

Ingredients

  • All-Purpose Flour – 200g
  • Butter – 100g
  • Sugar – 100g
  • Eggs – 2

Directions

  1. In a bowl, combine the eggs, softened butter, and sugar. Beat well until the mixture turns velvety.
  2. Sift the flour into the bowl and mix, first using a wooden spoon and then with your hands until it forms a dough ball.
  3. Place the dough ball in the refrigerator for at least 1 hour or overnight for a next-day cookie session. This step is crucial to solidify the butter, maintaining the cookies’ shapes during baking.
  4. Preheat the oven to 160ºC. Take a piece of the dough (keep the rest refrigerated), roll it out to 3-4 mm thickness, and use the cookie cutters to shape them. Place the cutouts on a parchment-lined baking tray.
  5. Bake for about 10-15 minutes. Ensure the cookies are only lightly golden at the edges, a sign of perfect baking. If they start to change color, the oven might be too hot.
  6. Take them out of the oven and let them cool. As they cool, they’ll become crispier. Enjoy nyannnnn (˃ᆺ˂)
Notes: To manage baking time, bake a few cookies initially to gauge your oven’s ideal baking duration. If unsure about baking all at once, control the batch size to ensure perfect baking. For later baking sessions, you can store the dough in the freezer.
