Ingredients

  • Sugar – 180g
  • Flour – 260g
  • Butter – 120g
  • Eggs – 2 Large
  • Bananas – 4 (Medium Ripe or 3 Large Ripe)
  • Apples – 2
  • Milk – 1 tablespoon
  • Cinnamon – 1 teaspoon
  • Baking Powder – 1 teaspoon
  • Baking Soda – 1 teaspoon
  • Salt – A Pinch

Directions

  1. Preheat the oven to 160°C, ensuring a slightly lower heat as the fruity cake needs more time to bake and handle excess moisture without burning. Prepare two cupcake pans, lining each with cupcake liners or parchment squares.
  2. In a bowl, mix room temperature butter with sugar until smooth. Add the beaten eggs one at a time to create a creamy mixture.
  3. Peel and slice the ripe bananas. Mash or blend until it forms a paste. Add milk and blend further, then combine it with the butter-sugar mixture.
  4. In another bowl, combine flour, baking powder, baking soda, cinnamon, and a pinch of salt.

  6. Peel and dice the apples into small cubes. Distribute the batter into cupcake pans; it doesn’t rise much, so be generous. Finally, place apple cubes on top of each batter.
