  • Chicken – 300gr (Chicken Leftovers and Cooked Vegetables)
  • Eggs – 5 L
  • Cream – 1 Package 200ml

  1. Remove the puff pastry from its package and arrange it in a pie pan, poke the bottom with a fork (so it will prevent the bottom from rising too much) and preheat the oven to 200°C (or whatever the puff pastry package recommends).
  2. If you haven’t already done so, shred the cooked chicken, pour it all over the pastry as well as any leftover cooked vegetables.
  3. Combine the cream and eggs in a bowl, season with salt and pepper and beat well, pour over the quiche filling.
  4. Cover with cheese and season with a pinch of pepper and dried oregano. Bake in the oven for 30 to 40 minutes until the dough and the top is golden brown.
Notes: This is a fantastic recipe to make use of leftovers, and also like any kind of quiche pie, lots of times when I get some leftovers, I always think if it can be used for a quiche, especially like roasted veggies and meats.
