Ingredients
- Rice – 1 Cup
- Carrot – 1 Small
- Chicken Breast – 1 (With Skin)
- Bacon – 2 Slices
- Onion – 1 Small
- Garlic – 3 Cloves
- Pesto Sauce – 2 Tablespoons
- Pepper – A Pinch
- Salt – A Pinch Parmesan Cheese – To Taste (Grated)
Directions
- In a pan, fry the bacon slices, roughly chopped onion, and 2 sliced garlic cloves. Cut the chicken into slices (keeping the skin if desired) and add to the pan. Fry on medium heat; no seasoning required as the pesto will do that job.
- In a small saucepan, add two cups of hot water to the rice, then add chopped carrot, a clove of chopped garlic, and a pinch of salt. Bring to a boil, then simmer covered for about 10 minutes until tender.
