Well, when life hands you pesto, you make pesto chicken, right? Right! It’s a different way to serve chicken, and let’s be real, jarred pesto isn’t technically the authentic basil-pine nut-Parmesan umami rich pesto. Often, it’s made with various nuts or cheese, sometimes even without parmesan, so it’s a bit of a good enough kind of thing, but we can’t deny its convenience!

Easy Stir Fried Pesto Boneless Chicken Thighs

Try this wonderful fix-up meal with a twist of adding some pesto to combine with crispy bacon and yummy chicken.

Ingredients

  • Rice – 1 Cup
  • Carrot – 1 Small
  • Chicken Breast – 1 (With Skin)
  • Bacon – 2 Slices
  • Onion – 1 Small
  • Garlic – 3 Cloves
  • Pesto Sauce – 2 Tablespoons
  • Pepper – A Pinch
  • Salt – A Pinch
  • Parmesan Cheese – To Taste (Grated)

Directions

  1. In a pan, fry the bacon slices, roughly chopped onion, and 2 sliced garlic cloves. Cut the chicken into slices (keeping the skin if desired) and add to the pan. Fry on medium heat; no seasoning required as the pesto will do that job.
  2. In a small saucepan, add two cups of hot water to the rice, then add chopped carrot, a clove of chopped garlic, and a pinch of salt. Bring to a boil, then simmer covered for about 10 minutes until tender.
  3. When the chicken is nicely fried, remove from heat and stir in the pesto. Mix well and serve over the rice, garnishing with a sprinkle of pepper and grated parmesan. Bon appétit!
Notes: If skipping the pesto, season the chicken with salt and pepper for a flavorful alternative. No chicken skin lover? No problem! Just take it out hehehe.
