How about a magic cake for Valentines? Well, what is a magic cake? Well, basically, it’s a cake with a single dough but which, when baked, naturally creates 3 different layers, a pudding-like layer on the bottom, a cake-like layer in the middle and a creamy layer on top. To achieve this effect, you need the combination of a super fluffy and creamy dough and the perfect baking time.

Does this mean it’s a difficult cake to make? Hummm Not really, you might fail the first time if your oven is stronger or weaker than mine, but once you’ve done it once or twice it will help your oven and from then on it will be perfect, apart from that even if you fail in the worst case you’ll get a cake with 2 layers or just 1 hehehe ;D Let’s get to the recipe.

The magic three-layer chocolate cake is a decadent dessert that combines rich chocolate flavors, making it an irresistible treat for Valentine's Day.

Ingredients

  • Eggs – 4
  • Powdered Sugar – 100gr
  • Water – 1 Tablespoon
  • Chocolate Spread – 100gr (Like Nutella)
  • Butter – 80gr
  • Flour – 90gr
  • Milk – 450ml
  • Salt – A pinch
  • Chocolate Spread – 175gr (Like Nutella)
  • Cream – 250ml
  • Chocolate – To taste
  • Hazelnuts – To taste

Directions

  1. Start by preheating the oven to 150ºC and prepare a 20cm square pan lined with non-stick paper.
  2. Separate the egg yolks from the egg whites. In a bowl, combine the egg yolks with the sugar and water and whisk until you have a creamy, homogeneous mixture.
  3. Add the 100gr of the chocolate spread, followed by the melted butter.
  4. Then sift in the flour and salt, whisk again for a few more minutes, adding the milk in batches.
  5. Whisk the egg whites and add them to the batter, folding them in carefully.
  6. Pour the batter into the tin and smooth it out with a spatula, bake for 45 to 50 minutes, the cake will still be a little soft when it comes out, let it cool and then put it in the fridge for at least 2 hours to solidify.
  7. While it’s in the fridge, whisk 175 grams of the chocolate spread with 250 ml of cream until it’s creamy, then put the mixture in the fridge for about 2 hours to solidify as well.
  8. After 2 hours, take out the chocolate and cream mixture, whisk it again until it’s very creamy and thick, take the cake out of the fridge and spread it on top of the cake, cover it well, sprinkle with chocolate shavings and some chopped hazelnuts and you’re done, you can serve it or put it in the fridge to serve later, bon appetit.
Notes: I dressed the cake with chocolate spread, hazelnuts and chocolate shavings, but you can make a thick dark chocolate ganache instead if you want a more adult taste 😀
