Portuguese Honey and Cinnamon Cookies • Broas de Mel
Try to make at home these Honey and Cinnamon Cookies, they are a super delicious traditional easter cookie from Portugal.
Ingredients
- Flour – 500gr
- Yeast – 1 Tablespoon
- Rosemary Honey – 70ml
- Eucalyptus Honey – 30ml
- Cinnamon – 1 tablespoon
- Fennel – 1 tablespoon
- Olive Oil – 100ml
- Brown Sugar – 150gr
- Eggs – 3
- Almonds – +/- 25 (with skin)
Directions
- Put the honey and olive oil in a bowl and microwave it for 1 minute just to warm it up, then mix it a bit.
- Heat some water, until it’s boiling, then put the almonds with the skin in and leave them for 1 minute, take one almond if the skin comes off easily, take these out of the water and peel them all and set them aside.
- Whisk in a bowl the sugar and 2 eggs, until creamy, then add the honey and olive oil mixture and whisk again.
- Finally, add the flour, baking powder, cinnamon, and fennel, and mix everything well until you create a semi pasty dough.
- Preheat the oven to 180°C and prepare a baking tray with non-stick paper.
- Create dough balls and put them on the tray (try and make sure every ball is about the same size, so they will all bake evenly), then put an almond on top of each ball and brush them with 1 whisked egg.
- Take them to the oven for about 12 to 18 minutes until they are golden brown, remove and let them cool completely before eating, you can store them well in an airtight container, enjoy!
Also, you can skip the step of peeling the almonds if you buy already peeled almonds 🙂
