Rustic Caramelized Apple Cake


Gotta love a pretty rustic Caramelized Apple Cake, it’s a delicious and comforting dessert that is perfect for fall or winter. This cake is made with tender chunks of apples, which are baked into a moist and flavorful batter filled with warm spices, brown sugar, and tart apples that creates both a super moist cake but also with a nice sweet and complex flavor.

I especially enjoy the combination of spices, this gives a real warmth to the cake, that combines perfectly with the caramelized notes of the brown sugar, you add thinly sliced apple to give it more texture and moistness, and you have yourself a wonderful almost addicting cake, and a type of cake that is rare to be baked outside the home, give it a try! This is a true Autum to Winter cake, the combination of spices, apples and sugar makes it a delicious moist cake.


  • Apple – 300gr (+/- 3 Big Apples, Preferably a Tart Variety)
  • Flour – 300gr
  • Eggs – 2
  • Baking Soda – 1 teaspoon (barely full)
  • Cinnamon – 1 teaspoon
  • Clove – 1 teaspoon
  • Nutmeg – 1 teaspoon
  • Brown Sugar – 275gr
  • Cooking Oil – 250ml (Sunflower)
  • Vanilla – 1 teaspoon (of extract)
  • Salt – A Pinch
  • Butter – For greasing
  • Flour – To Sprinkle
  • Brown Sugar – To Sprinkle
  • Cinnamon – To Sprinkle


  1. Start by peeling and slicing the apples thinly, and if you think you need it, pour a little lemon juice to prevent the apples from getting darker.
  2. Preheat the oven to 180ºC and prepare a baking pan with a removable bottom, cover the bottom with non-stick paper and grease it with butter and dust it with a bit of flour.
  3. Now add the oil and sugar in a bowl and whisk until everything is creamy, then add the eggs and vanilla and whisk some more until everything is well combined.
  4. In a separate bowl, add the flour, baking soda, cinnamon, ground cloves, nutmeg, and a pinch of salt.
  5. Pour the dry mixture into the wet mixture and mix it all with a wooden spoon until it all comes together.
  6. Add the apple slices, you’ll see that the cake batter will be very thick, and pour this into the mold.
  7. Finally, cover it with a generous sprinkling of brown sugar and a pinch of cinnamon.
  8. Take it to the oven for about 50 minutes to 1 hour until the cake is well baked and golden brown, note that since it is a fruit cake, it will be more moist, and it will take longer to bake, remove when well baked, poke with a toothpick in the middle of the cake if the toothpick comes out dry then the cake is ready.
  9. Remove from oven and wait a few minutes before taking it out from the mold, and it’s ready to serve, enjoy.
Notes: I like this version with thinly sliced apples, but you can also make this cake with little cubes of apple or add some dry fruits like raisins, almonds or hazelnuts.
