Garlic Steak with Fava Beans


I know, fava beans have a bit of a bad rap and are often considered an underappreciated vegetable because they have a unique slightly bitter flavor and creamy texture that not everyone enjoys. Additionally, they require a bit of preparation before they can be eaten, you have to remove the stalk and then remove the outer skin or cook with the outer skin.

Fava beans are a nutritious and tasty vegetable that are worth trying if you haven't before. With the right preparation and cooking methods, they can be a delicious addition to any dish.


  • Beef – 1 Steak
  • Chorizo – 10 Thin Slices
  • Fava Beans – 150gr (Broad Beans, Peeled and Skinned)
  • Garlic – 1 clove
  • Olive Oil – 1 Pinch
  • Thyme – A pinch
  • Paprika – One Pinch
  • Pepper – One Pinch
  • Salt – One Pinch


  1. Start with the fava beans, wash and peel the skin, also remove the outer skin/membrane and cut about 10 thin slices of a good chorizo such as the Portuguese Lamego chorizo.
  2. Add the fava beans and the chorizo in a frying pan, season with a little olive oil, paprika, salt and pepper, and cook until the broad beans are very tender, about 10 to 12 minutes.
  3. Season both sides of the steak with thinly sliced garlic, thyme, salt and pepper, in another pan add a drizzle of olive oil and fry the steak, when nicely browned turn and fry until both sides are browned and medium rare inside.
  4. And that’s it, serve the steak on top of the stir-fried fava beans, bon appétit.
Notes: This steak was fried, if you want to add a bit more richness add a bit of butter when the steak is almost done (like a restaurant), or if you want a slightly more healthy version, then just grill the steak.
