Instead of using the traditional tortilla chips or other snack, I made some thin cut French fries to serve as a base for a delicious and spicy beef type of chili sauce, I also swapped the softer cheeses for a pinch of grated Parmesan, I think it was a better combination, and although i love me some cheese, i think sometimes these chips/sauce kind of dishes have way too many things and too much cheese, for that i would prefer just chips and cheese sauce ;D
Also note that since this type of meat sauces need a bit of time to refine its flavour, both when it’s cooking and after it’s done, it’s a good idea to make the sauce in advance or the day before, also you dont need this recipe, if you have some beef chili leftovers that’s the best to use, so you can always fry up some potatoes or buy tortilla chips, so let’s get to the recipe!
Homemade Potato Chips with Spicy Meat Sauce

Delicious mexican inspired dish with fresh cut thin fried potatoes with a savory and spicy meat sauce, similar to chili.
Ingredients
- Beef – 400gr (minced)
- Bacon – 2 slices
- Red Beans – 150gr (or Black Beans)
- Tomatoes – 1 can (+/- 400gr)
- Onion – 1
- Garlic – 4 cloves
- Chives – A pinch
- Parmesan Cheese – A pinch
- Olive Oil – A few drizzles
- Sweet Paprika – A pinch
- Smoked Paprika – A pinch
- Cayenne Pepper – A pinch
- Pepper – A pinch
- Potatoes – 4 Large
- Sunflower Oil – As needed
- Salt – A pinch
Directions
- Start with the chili meat sauce in a large frying pan and add a few drizzles of olive oil, followed by the chopped onion and garlic, and let it sauté for a while over a medium heat.
- Then add the chopped bacon and let it fry a little more until all the bacon is golden brown.
- Now add the minced meat and season everything with a little sweet paprika, smoked paprika, cayenne pepper, pepper and salt, letting the meat brown evenly and cook completely.
- Then add the diced tomatoes, lower the heat a little and let it cook for 20 to 30 minutes.
- Finally add the beans and let everything simmer for another 20 minutes, then taste and adjust the seasoning until it’s to your liking, i kinda like a spice kick so i add a bit more cayenne pepper, pepper or even some hot sauce, remove from the heat and it’s ready to serve.
- When it’s time to make the fries, peel the potatoes and slice them very thinly with a mandoline or by hand. Pour the potatoes into a bowl and cover with water, leave for 1 hour in the water to remove the extra starch and make them more crispy.
- After the hour, remove the potatoes from the water and dry them well with a kitchen towel or absorbent paper.
- Heat the oil over medium-low heat and fry the potatoes for about 5 minutes until soft, remove from the oil before browning to some more kitchen paper, repeat until all the potatoes have been fried.
- Now increase the oil temperature to medium-high and fry the potatoes again, don’t add too many at once, fry until they are golden brown, drain again to kitchen paper, season with a pinch of salt, repeat until all the potatoes are well fried.
- Finally just assemble, in a serving bowl cover the bottom with a pile of potatoes, then add the beef chili on top (if there is need, heat it up) and finally cover everything with a generous layer of grated Parmesan cheese and chopped chives and you’re done! Enjoy!



Note that double frying is important if you want the chips crispy, but if you like them more soft, then just fry them once until golden.
