I do these quite often, mostly because i want to buy more fresh eggs or i already have too many, this way they will not only last well for up to a week in the fridge but you get some eggs with a nice change of flavor from plain boiled eggs, you can eat them straight they are rich in nutrition and low on calories, or serve them with other dishes, they are pretty easy to make and super convenient! Portuguese Pickled Boiled Eggs

Easy homemade pickled eggs, perfect for a light snack or to add as complement to other dishes.
Ingredients
- Eggs – 5
- White Wine Vinegar – +/- 1 Cup
- Water – Enough
- Salt – A pinch
- Pepper – A pinch
- Garlic Powder – A pinch
- Oregano – A pinch
Directions
- Start by boiling the eggs. Add the eggs to a small saucepan of cold water and bring to the boil. When it comes to the boil, cover and remove from the heat, but leave the eggs in the hot water for about 8 minutes so that they are cooked thoroughly.
- Then pour the eggs into a bowl filled with cold water and leave them there for about 15 minutes to cool completely, then peel them and set them aside.
- Now prepare a plastic container or jar, put the eggs in and add the vinegar. You don’t need the whole glass, you just want it to cover half the eggs, then season with a pinch of fine salt, pepper, garlic powder and oregano, then finish covering the eggs with cold water and you’re done.
- Put them in the fridge for at least a day, then you can eat them straight up, or use them in salads or other dishes that require hard-boiled eggs, these will last well up to a week. Enjoy!
