I absolutely love these, if i have extra carrots and i dont have a nice plan to use them i tend to make a carrot cake or these seasoned carrots, these are very traditional in the Algarve region of Portugal, its a simple basic pickle, but i wouldn’t call them a pickle or conserve, these are not for long term conservation, these will last well about a week in a hermetic box in the fridge but not like months.

And that’s a bit of the point, these are just really well seasoned cooked carrots, its a nice, simple and yummy appetizer, perfect as a nice snack or even as an additional side dish, its very common in the Algarve to be served this, bread and some olives before your meal starts, lets check the recipe!

Portuguese Seasoned Carrots • Cenouras Temperadas

Classic Portuguese appetizer with sweet well seasoned carrots with a nice hit of garlic and coriander.

Ingredients

  • Carrot – 2 Large
  • Garlic – 2 Cloves
  • Coriander – A Pinch
  • Olive Oil – 1 Tablespoon
  • Vinegar – 2 Tablespoons
  • Paprika – A Pinch
  • Pepper – A Pinch
  • Salt – A Pinch

Directions

  1. Start by peeling and cutting the carrots into circles of the same thickness, put them in a pan with plenty of hot water and a pinch of salt and cook for about 8 to 10 minutes until tender (just use the point of a knife if it goes easily into the carrot, then its cooked), drain, and let them cool a little.
  2. Chop finely the garlic cloves and coriander, add to the carrots, mix well.
  3. Then season with the olive oil, vinegar, paprika, salt and pepper, mix again and put in a hermetic box, let it set in the refrigerator for at least 12 hours before serving. And that’s it, then just snack, good appetite.
Notes: If you dont like coriander, you can change it for parsley, you can also adjust the seasoning to your taste, you want a more strong pickle taste, add more vinegar or a stronger vinegar, you want a more sweet , then cut on the vinegar.
