When you want a soft, easy-to-make cake for tea, there’s nothing like a cream cake, simple to make with that sweet touch that only cream can give, and although the recipe is pretty simple, it doesnt mean its not a fantastic fluffy cake perfect for every occasion.
I kinda like it simple and plain, but like a classic pound cake this type of cake is firm enough to be perfect to cover, sprinkle or add a filling, it also doesn’t rise much so good for stacking as well, i used a large cake mold, so the cake is wide and low, normally this cake here in Portugal is made with a smaller castle type mold tin, so it’s a taller cake with a hole in the middle.
Super Moist Cream Cake

A bit like a portuguese pão-de-ló this is a delicious simple plain cake, it's more texture than strong flavours, so you can have it simple or add more to make it your own.
Ingredients
- Flour – 150gr
- Baking Powder – 1 tsp
- Sugar – 250gr
- Cream – 200ml (Double Cream)
- Vanilla – 1 tsp (Extract)
- Eggs – 3 L
- Butter – To Grease
- Flour – To Sprinkle
- Powdered Sugar – To Sprinkle
Directions
- Preheat the oven to 180ºC and grease it with butter, then sprinkle with a little flour.
- Combine all the ingredients in a bowl and whisk until you have a homogeneous mixture, super creamy and smooth.
- Pour the mixture into the mold and bake for about 30 minutes until it’s set. To be sure, poke a toothpick into the center of the cake and if it comes out dry, the cake is ready.
- Remove the cake from the oven and let it cool a little before unmolding, then sprinkle with a little icing sugar before serving, enjoy!
