Baba ghanoush or baba ghanouj is a very typical Middle Eastern sauce, think from Iraq to Egypt, the sauce may seem complicated because it has an exotic name but it’s a very simple sauce/spread, a bit like hummus the base is just 2 or 3 ingredients, in this case we have roasted eggplant and spices, often also a little bit of tahini (sesame seed paste), tomato, onion or other vegetables, but that’s pretty much it!

The most common form is roasted eggplant, with some seasoning, olive oil and lemon juice, in this case I made a variety with a little more spices to make it a little bit more spicier?!? Hehehe but it’s not too different from the original, it’s a delicious and super healthy spread to accompany some bread, pita, toast, raw vegetables or a very delicious lavash bread! 😀 let’s check the recipe.

Nothing like a creamy baba ganoush, this Middle Eastern delight transforms simple eggplants into a delicious dip, perfect with bread, pitta or crisp vegetables.

Ingredients

  • Eggplant – 2 medium
  • Garlic – 4 cloves
  • Tahini – 2 Tablespoons
  • Lemon – 1/2 (Juice)
  • Olive Oil – 1 Tbsp
  • Smoked Paprika – 1 Teaspoon (More for sprinkling)
  • Cumin – A Pinch
  • Cayenne Pepper – A Pinch
  • Pepper – A Pinch
  • Salt – A Pinch

Directions

  1. Start by roasting the eggplants in the oven, the easiest way is to wash them, cut them lengthways and put them in the oven at 180ºC for about 20 minutes until they are wilted and slightly caramelized.
  2. Take them from the oven and then remove the pulp of the eggplants into a bowl, add the finely chopped garlic, tahini, lemon, olive oil, smoked paprika, cumin, cayenne pepper, pepper and salt. You can crush it with a mortar, grind it with a chopper or, as I did put it into a deep bowl, blend it with a hand blender until you get a smooth and creamy spread.
  3. Taste and adjust the seasoning until it’s to your liking, then pour everything into a serving bowl and serve with a sprinkling of smoked paprika and pepper on top with some bread, bon appetit.
Notes: Baba Ganoush is a kind of spread that you can adjust a lot to your taste, some people like it like this with lots of spices, some like it more plain, so a good tip is to season ver light, taste and adjust to your taste!
