Ohhh why not indulge in these delightful Mini Pavlovas topped with blueberries and sour cherries, this is indeed a sweet twist on that classic dessert. Not only do they offer a perfect balance of crisp meringue and luscious fruit, but they’re also an excellent way to utilize leftover egg whites, reducing kitchen waste. Crafting these individual pavlovas is a simple yet impressive endeavor, making them an ideal treat for gatherings or a special weeknight indulgence.

Ingredients

  • Egg Whites – 8 (+/- 300ml)
  • Sugar – 440gr
  • Corn Starch – 4 teaspoons
  • Vinegar – 4 teaspoons
  • Cream – 200ml
  • Sugar – 2 tablespoons
  • Sour Cherry Preserve – 100gr
  • Blueberries – 125gr

Directions

  1. Start by preheating the oven to 150ºC.
  2. In a large bowl, whisk the egg whites until stiff, then add the sugar and whisk again until the mixture is stiff.
  3. Then add the cornstarch and vinegar and whisk again until everything is well mixed and creamy.
  4. Now prepare a baking tray lined with non-stick paper and pour spoonfuls of the batter onto it and make small crowns (so you can add the whipped cream and fruit after its baked) and place in the oven, turn the oven down to 120ºC and bake for about 1 hour and 20 minutes until they are well baked, you want them white and crispy on the outside and creamy on the interior, you don’t want them brown.
  5. When it’s baking, start making the whipped cream, whip the cream with 2 tablespoons of sugar until you have a very thick cream, store in the fridge.
  6. When the meringues are well cooked, take them out and let them cool completely, then just fill each one with whipped cream and top with a sprinkle of the the fruit and you’re ready to serve!
Notes: You can use all kinds of fruits, ive done these with peaches once and another time with mixed fruits, just make sure these are not very watery fruits because those will start watering down the cream and melting the meringue, or well if they are just add them prior to start eating, enjoy.
