Classic portuguese little tarts made with fresh cheese, with a creamy texture and sweet taste with the tangy umami of the cheese.

Ingredients

  • Portuguese Cottage Cheese – 170gr (Requeijão)
  • Sugar – 40gr
  • Flour – 22gr
  • Egg – 1
  • Egg Yolk – 1
  • Olive Oil – As Needed

Directions

  1. Combine the sugar, flour and egg in a bowl and whisk until it forms a paste.
  2. Then add the requeijão curd cheese and mash coarsely with a fork.
  3. Preheat the oven to 180ºC and grease the molds with a little olive oil, pour the mixture into each mold.
  4. Brush the top with whisked egg yolk and bake for about 14 minutes until golden and fluffy and you’re done, let it cool a bit before taking from the mold and enjoy!
Notes: Ricotta cheese is a good alternative if you cant find portuguese requeijão cheese. Also these is a good pie to add a drizzle of a bitter sweet jam on top, like sour orange or apricot jam on top after its baked.
