Ingredients

  • Unsalted Butter – 125gr
  • Sugar – 200gr
  • Eggs – 4
  • Milk – 100ml (Semi-Skimmed)
  • Flour – 200gr
  • Cooking Chocolate – 140gr (60% Cocoa)
  • Vanilla – 1 Tablespoon (Extract)
  • Nuts – 100gr
  • Salt – A Pinch

Directions

  1. Combine the sugar and room temperature butter in a large bowl and whisk until smooth.
  2. Then separate the egg yolks from the egg whites and add the egg yolks and milk, whisk again until everything is incorporated.
  3. Now add the sifted flour and mix with a wooden spoon.
  4. whisk the egg whites until stiff, then take spoonfuls of the batter and carefully fold into the rest of the batter.
  5. Now divide the dough into two parts, in one part you will add a tablespoon of vanilla extract.
  6. Melt the chocolate in a bain-marie (double-boiler) then add it to the other dough, so you have one chocolate and one vanilla.
  7. Preheat the oven to 180ºC and prepare a rectangular pan by greasing with butter and then lining with non-stick paper.
  8. Pour the batter into the molds, it’s best to do it one at a time to try and create patterns in the batter.
  9. Finally sprinkle with the nuts, in my case I still had to grind the almonds and hazelnuts that were whole, bake for about 25 to 30 minutes until golden brown, prick with a toothpick in the center if it comes out dry then the cake is ready, remove from the oven and let cool before removing from the pan, bon appetit!
Notes: This kind of cake the nuts are absolutely optional, but i think they are a good addition especially for another texture, so adding other things like chocolate chips are a good alternative.
