I love this kind of snack, served hot with toasted bread or thin toasts, it’s a fantastic starter or snack and super easy to make for a party or Christmas celebration. In this case, I already had the roasted peppers from another recipe, but you can always buy roasted peppers or canned peppers, which are also fantastic (just drain them well).

This is one of those recipes that you assemble, put in the oven and it’s ready to serve. Instead of using brie, you can use camembert or other soft cheese, instead of peppers you can add other condiments or vegetables that you like, for example it’s also fantastic with mushrooms, garlic and sweet peppers, so let’s get to the recipe.

Directions

  1. Preheat the oven to 180ºC.
  2. Put the cheese in the middle of a pyrex or small ceramic bowl, use a knife to cut off the top of the cheese.
  3. Add chopped roasted peppers and thinly sliced garlic cloves on top.
  4. Season with a few drizzles of olive oil and balsamic vinegar followed by a pinch of pepper and salt.
  5. Put the cheese in the oven and let it bake until it’s all golden and melted and you’re ready to serve it with toast.
Notes: You can see how simple this is, you can add or change this to your taste, make it more spicy, add more spices, add other vegetables, add pickles in the end, there is a lot to choose.

Also on what to serve, i like toasted bread, but you can use all kinds of things to dip, from tacos, to potato chips, to toasts, saltines, its up to you.
