I love this kind of sandwich, it’s basically a chicken salad tucked inside bread, perfect for the Summer. In this case I had some leftover roasted chicken with carrot and onion, so I mixed it with mayonnaise and cilantro, then piled it all together with tomato and iceberg lettuce, its that simple and delicious.

Yeah i know its the kind of “open the fridge and check what we have” recipe but that’s what you should do with leftovers hehehehe, make the best use of them, so maybe this more a recommendation than a recipe! Nothing fancy but sometimes easy and delicious is just as yummy. Let’s get to the recipe!

5-Minute Creamy Chicken, Lettuce and Tomato Sandwich

Oh having some roasted chicken leftovers always give me a smile i know im probably going to get a yummy sandwich the next day ;D

Ingredients

  • Bread – 2 Slices (Sliced)
  • Chicken – 100g (Already Roasted)
  • Carrot – To Taste (Already Roasted)
  • Onion – To Taste (Already Roasted)
  • Iceberg Lettuce – 1 Leaf
  • Tomato – 3 Slices
  • Cilantro – To Taste
  • Mayonnaise – 1 Tablespoon

Directions

  1. Start by shredding the chicken and chopping the leftover carrots and onions with a pinch of chopped cilantro and a tablespoon of mayonnaise, mix to create a paste.
  2. Toast the bread and slice some tomatoes.
  3. Assemble the sandwich, ideally, add the chicken paste to one slice and the lettuce and tomato to another, as this makes it easier to put the two halves together. And there you have it, ready to serve!
Notes & Tips: If you don’t have leftover roasted chicken, carrot, or onion on hand, you can always grill a small chicken breast and stir-fry a bit of carrot and onion just for this.

Pat the tomato slices dry with a paper towel before assembling, this keeps the bread from turning soggy.

Toasting the bread is key here, it holds up much better against the creamy filling than plain soft bread.

Rotisserie chicken works great if you don’t have homemade leftovers, just shred it the same way.

Swap the mayonnaise for Greek yogurt or a mayo-yogurt blend if you want a lighter version.

If you have freshly cooked chicken, let the mixture chill for 10 to 15 minutes before assembling if you have the time, it firms up and makes the sandwich easier to hold.

Wrap it tightly in parchment or foil if you’re taking it on the go.
