This recipe is one of those “what you see is what you get” types of recipes, a beautiful fried mirandela alheira sausage with some fried eggs (since I’ve got the oil hot, I might as well make use of it) and some spaghetti, for me this is an absolute indulgence, its comfort food, it’s not something you eat every day, it’s not something you should eat every month, but once in a while it’s absolutely worth it hehehe.
This is also a very common restaurant dish in Portugal, it’s very plain, cheap and quick to make, normally it’s all fried food, fried sausage, fried eggs, fried potato chips, it’s one of those dishes for someone that doesn’t want anything special or wants something quick and cheap, its like fish sticks with potato chips in America, i went with spaghetti just to avoid more fried foods ;D
Also this sausage is famous in Portugal, the Alheira is a sausage made with different meats from pork, veal, duck, chicken, quail or rabbit mixed with bread, paprika, lard and garlic, the name itself of the sausage comes from the portuguese word for garlic (alho… therefore alheira), the origin of the sausage is from portuguese jews that wanted to blend in better with portuguese customs of making smoked sausages (and also to avoid persecution) and so they made a sausage that had no pork, but had other meats like game or poultry with bread and garlic and these eventually became popular all over Portugal.
This sausage is also from the region and city of Mirandela, where this sausage is famous, and buying the Mirandela variety is always a sign of good quality, since you can make a alheira sausage very cheaply with extra bread and just chicken, a more expensive one like the ones from Mirandela tend to be nicer, richer with mix of meats and good seasoning, also you might find in the supermarket variations besides different origins and regions you can have versions like “Alheira de/com Caça” (Caça means hunting so the mix of meats will be more around game) or “Alheira de Peru” (turkey version) or “Alheira de Frango” (chicken version) or “Alheira Regional” (regional means regional, but for alheiras means normally the cheapest version hehehe), well let’s check the recipe!
Deep Fried Portuguese Alheira Sausage With Egg
Classic portuguese restaurant dish, usually one of the cheapest in the menu, frying up a traditional portuguese alheira sausage with some fried eggs, perfection!
Ingredients
- Alheira – 1 (from Mirandela if possible)
- Eggs – 2
- Spaghetti – 150gr
- Vegetable Oil – As much as needed
- Butter – A Teaspoon
- Pepper – A pinch
- Salt – A pinch
Directions
- Start by making the spaghetti in a small pot with plenty of boiling hot water and a pinch of salt, let the spaghetti cook until it’s to your liking, drain and season with a knob of butter.
- Heat a frying pan with oil over a medium-high heat. When the oil is hot, cut a slit with a sharp knife all around the alheira sausage length wise on the outside of the sausage (this is extremely important, for 2 reasons when the sausage hits the oil it will expand and if the casing of the sausage is not cut, it might explode, and second if you just give it some cuts it might just pour out some of the sausage, by cutting it like that, when it hits the oil the skin will shrink and shrivel to the inside of the sauge, so you only fry the inside, no spillage no mess, crispy perfection).
- Put the sausage in the hot oil (remember to cut the skin length wise on the outside), you’ll see that the skin will shrivel and come off easily, take it out and fry both sides until golden brown, since the alheira sausage filling is already cooked you are just crispying the outside and heating it up, so when both sides are golden, take it out to some kitchen paper or rack to drain.
- Then Then add the two eggs, use a spoon to pour a little oil over the eggs, they will fry quickly, remove when they are perfect to your taste, to some kitchen absorbent paper or rack to drain from the excess oil.
- And that’s it, serve everything, you can add a little salt and pepper on top of the eggs, the alheira doesn’t need any seasoning, bon appetit.
