Portuguese Sweet Angel Hair Pasta or “Aletria Doce” (Aletria means the name of the pasta, and Doce means sweet), is a very traditional sweet from Portugal, very common during Christmas and similar to rice pudding, but made with Angel Hair Pasta instead of rice.

There are basically two versions, this one that makes a more thick version that you can cut slices like a cheesecake and there is a more creamy version more similar to rice pudding, lets check the recipe.

Traditional sweet Sweet Angel Hair Pasta, is a very delicious sweet from Portugal during Christmas.

Ingredients

  • Vermicelli Pasta – 200gr (Angel Hair Pasta)
  • Milk – 100ml
  • Egg Yolks – 5
  • Water – 900ml
  • Sugar – 250gr
  • Butter – 10gr
  • Lemon – 2 Peels
  • Salt – A Pinch
  • Cinnamon – 1 Stick
  • Cinnamon – To Sprinkle

Directions

  1. Place the water, sugar, butter, lemon peel, cinnamon stick, and a pinch of salt in a saucepan over medium heat and cook for about 10 minutes, boiling for 2 or 3 minutes to soak the water with the aromas.
  2. Then add the vermicelli, dissolving them in your hands into the water, stir well and cook for another 10 minutes until the vermicelli is cooked.
  3. Whisk the egg yolks with the milk, then add spoonfuls of the hot liquid from cooking the vermicelli, always stirring, this is done to increase the temperature of the egg yolks without spoiling them.
  4. When the yolks are very hot, return everything back to the pan with the vermicelli, pour them in, always stirring, let it cook for another 5 to 10 minutes until the mixture is very creamy and thick.
  5. Then remove it to a platter or pyrex, let it cool and then put it in the fridge, serve it sprinkled generously with ground cinnamon, good appetite and Merry Christmas.
Notes: If you cant find this kind of pasta, this can also be done with Capellini pasta. These desert will keep well in the fridge for a couple of days.
