Who doesn’t love some crispy oatmeal cookies? Honestly, people forget how these are such a satisfying treat, they have great texture, a natural sweetness, and they are just so easy to bake, you should try it yourself hehehe if you are here for the recipe, right! 😀

Since we’re on a bit of a rustic recipe kick lately and it’s getting warm outside, I figured, why not lean into it with some proper rustic oatmeal cookies? I mean, any cookie made with oat flakes is going to come out looking beautifully rustic, that’s just the nature of oats. For this one I went with the classic base but kicked things up a notch by adding a little spice mix with cinnamon, nutmeg, and cumin, just to make the aroma more interesting. Oh, and I swapped regular sugar for brown sugar, and I have to say, these came out a solid 5 star cookie.

Not only that, but they held up for about 3 days without any issues, right up until everyone had polished off the two batches I made. Yep, I doubled the recipe, but I’m going to share the original here. This one gives you around 16 cookies, which is more than enough to refill that cookie jar ;D. Oh and I also have to mention that I made this whole recipe in… hmm, less than 30 minutes, no rush whatsoever hehehe. So 30 minutes, 16 cookies, try and beat my record! Let’s get into it!

Crispy & Rustic Spiced Oatmeal Cookies with Brown Sugar

So soo sooooo simple you'll wonder why you don't make these every weekend. Fair warning though, once you start eating them, stopping is a whole different story! ;D

Ingredients

  • Butter – 75g (Room Temperature)
  • Flour – 100g
  • Baking Powder – 1 Teaspoon
  • Rolled Oats – 100g
  • Brown Sugar – 100g
  • Eggs – 2 L (Room Temperature)
  • Muesli – 2 Tablespoons (Or Granola, Nuts)
  • Muesli – For Sprinkling (Or Granola, Nuts)
  • Cinnamon – 1 Teaspoon
  • Nutmeg – 1 Teaspoon (Not Full)
  • Cumin – 1 Teaspoon (Not Full)
  • Salt – A Pinch

Directions

  1. Preheat the oven to 200ºC (390ºF) and line a baking sheet with non-stick paper.
  2. In a bowl, add the room temperature butter, followed by the flour, baking powder, rolled oats, and brown sugar. Mix well until a consistent dough forms.
  3. Add the eggs to the mixture and mix again, followed by the muesli, and mix until you get everything well put together.
  4. Now form small balls of dough and place each one on the lined baking sheet. Keep them a similar size so that all the cookies bake evenly.
  5. Finally, sprinkle each cookie with a little muesli and bake for 8 to 10 minutes, or until golden brown. Remove from the oven and let them cool down before… enjoying!
Notes & Tips: The muesli in this recipe is doing a lot more than it looks like. It adds little pockets of texture so every bite feels slightly different, which honestly makes them way more interesting to eat than just plain oat cookies. If you don’t have muesli on hand, granola, a mix of dried fruit and nuts, or even a simple butter crumble topping will all work great. You can also skip it entirely, but I really think it’s worth including.

On the spices, cumin in a cookie might sound weird but trust the process. It’s subtle and works together with the cinnamon and nutmeg to give the whole thing…. a warm, slightly complex aroma that makes these cookies smell incredible while baking.

For storage, keep these in an airtight container and they’ll stay nice and crispy. If you leave them out in the open they’ll go a little soft, but honestly? They’re still totally good that way too. These also travel really well, great for bringing to a party, a picnic, or just stashing in your bag for the day.

If you want to make more, just double the recipe like I did. The math is simple and the extra cookies disappear faster than you’d expect hehehe.
