I love this kind of puff pastry snack, both eating it and making it, they’re super simple to put together and you can fill them with whatever you’re in the mood for. This time I went with a delicious chicken curry with mushrooms, yeah i know, i normally get these stuffed with sausage, cheese, or ham, but honestly, don’t limit yourself, fill them with whatever you like.
And since its Summer time these are perfect for any beach going, bbq, picnic that you want todo, super easy to make, and you can easily double or triple the recipe, perfect for any celebration. Let’s get to the recipe!
Flaky Curried Chicken & Mushroom Filled Puff Pastries

Gotta love these easy puff pastry pockets, super easy to bake, with a creamy interior and crispy exterior, yeah its maybe... too much to love hahahaha.
Ingredients
- Puff Pastry – 1 Roll (+/- 200g)
- Chicken – 1 Large Breast
- Mushrooms – 100g (Fresh)
- Onion – 1
- Garlic – 2 Cloves
- Egg – 1
- Sesame Seeds – A Pinch
- Cream – 100ml
- Flamengo Cheese – 4 Slices
- Olive Oil – A Drizzle
- Paprika – A Pinch
- Turmeric – A Pinch
- Curry Powder – A Teaspoon
- Cayenne Pepper – A Pinch
- Pepper – A Pinch
- Salt – A Pinch
Directions
- Start by preparing the filling. In a skillet over medium heat, add a drizzle of olive oil and the chopped onion and garlic. Season with a pinch of salt and sauté until the onion is well caramelized.
- While the onion caramelizes, preheat the oven to 200ºC (390ºF) and line a baking sheet with parchment paper.
- When the onion is golden brown, add the chicken in small cubes, season with paprika, saffron, curry powder, cayenne pepper, black pepper, and salt. Mix and let the chicken cook a little (you want the chicken almost cooked, but not fully cooked, so it wont be dry).
- Add the diced mushrooms and cream and cook for another 5 minutes until the mushrooms are completely cooked. Taste, and adjust the seasonings, remove from the heat to cool slightly.
- Remove the dough from the refrigerator and cut it into 8 pieces. Place half a slice of cheese on each piece of dough, then add a portion of the filling and roll it up. Arrange on the baking sheet and repeat for the remaining dough.
- Finally, whisk the egg and generously brush it onto each pastry, sprinkle with sesame seeds, and bake for about 18 to 20 minutes until golden brown. Since the filling is practically cooked, you only need to keep an eye on the puff pastry, and that’s it! Remove from the oven and it’s ready to serve. Enjoy!





After filling but before baking, you can freeze them instead of baking right away, then when you’re ready, go straight from the freezer to the oven, just adjust the time, add about 2 to 3 extra minutes.
Ohh i also used Flamengo Cheese its a very common cheese in Portugal, just to add creaminess, so just use whatever cheese you think will work well with a curry, just don’t use a too soft cheese like cream cheese or something, because that will melt and come out of the filling.
You can use other kinds of mushrooms besides the common button ones, there’s plenty of variety out there, and if you can’t find fresh ones, canned works too, just make sure to drain them very well before adding to the sauté.
work with the puff pastry while it’s still cold, warm dough gets sticky and won’t puff up as nicely in the oven. Also, don’t overfill each pastry, it’s tempting, but too much filling makes them harder to seal and more likely to burst open while baking.
If you want extra shine and color, brush on a second coat of egg wash halfway through baking.
These also reheat beautifully in the oven or air fryer for a few minutes if you have leftovers, though a microwave will leave the pastry soft rather than crisp. But i personally love them cold, so never need to reheat myself ;D
