I made these for World Nachos Day, hehehe ;D Honestly, I hadn’t eaten them in literally years. I tend to stay away from overly salty snacks, so things like potato chips, nachos, and corn snacks all fall into that category for me, but every once in a while it doesn’t hurt to treat yourself. And since I was already at it, instead of grabbing a basic bag of nachos I decided to try two different kinds: some Doritos with double pepperoni pizza flavor (whatever that means, honestly) and some guacamole-flavored ones from the store. Not only did they make the dish more colorful, they were fun to experiment with!
I would say this is a typically American dish in the Tex-Mex style. Nachos are traditionally pieces of corn tortilla that get cut up and fried, then piled high with a bunch of stuff on top, hehehehe. The nice thing about this dish is that you can put pretty much whatever you want on it. In this case I used some leftover burrito fillings and a cheese sauce. Clearly this is a dish for an appetizer or as a starter for a party. I see many of these dishes done with way too much cheese and meat, but I think it tastes better with a combination of cheese and meat mixed with plenty of vegetables, so you always get that touch of freshness and it’s not so greasy and heavy.
The great thing about nachos is that they’re incredibly forgiving and versatile, if you have leftover roasted meat, tomato sauce, bits of cheese, salad leftovers, pretty much anything works here. It’s the… ambrosia of salty snacks hahahaa. Let’s get to it!
Tex-Mex Style Spicy Loaded Nachos with Guacamole and Creamy Cheese

Sometimes you just want some indulgence, and for those days... nothing like some nachos with refried beans, melted cheese, guacamole, and fresh cream cheese.
Ingredients
- Tortilla Chips – 1 Packet (150g)
- Beef – 100g
- Onion – 1 (Small)
- Garlic – 1 Clove
- Chili Pepper – 1
- Olive Oil – A Drizzle
- Cream – 200ml (Or a little more)
- Mozzarella Cheese – 100g
- Cheddar Cheese – 60g
- Tomato – 1/2
- Avocado – 1/2
- Cilantro – A Pinch, Chopped
- Sweet Paprika – A Pinch
- Pepper – A Pinch
- Salt – A Pinch
- Cheese – To Sprinkle (Opcional)
- Olives – To Sprinkle (Opcional)
- Guacamole – A Dollop (Opcional)
- Sour Cream – A Dollop (Opcional)
Directions
- First, make a sauté, in a frying pan with a drizzle of olive oil, add the chopped onion and garlic, sauté for a bit, then add the chopped chili pepper and season with a pinch of salt.
- When the onion is golden brown, add the ground beef and season with a pinch of paprika, salt, and pepper. Cook until the meat is well done, taste, and adjust the seasonings.
- For the cheese sauce, heat the heavy cream over low heat until lukewarm, then add the mozzarella and cheddar cheeses. Let them melt completely. I like a thick sauce, but if you prefer a creamier sauce, add less cheese or a little more heavy cream to your liking (or maybe some milk so its lighter).
- Let the cheeses melt well, then dice the tomato and avocado.
- Finally, just assemble it. In a baking dish, place the tortilla chips on the bottom and then cover with the other ingredients. I like cheese sauce, meat, tomato, avocado, and cilantro, but the most common way is to pour the cheese sauce over everything at the end. It’s a matter of personal taste. I also added more cheese on top and after everything was melted i also added a generous dollop of sour cream, guacamole and olives, but that’s totally opcional. If you’d rather skip the cream cheese, sour cream is a great substitute, and given how rich and savory the rest of the dish is, it actually might be the better choice, and yes i did add some on the top to try hehehe.
The seasoning here is kept fairly simple so it works for everyone. But when I went to eat it, I felt it was missing a little kick. A pinch of hot chili flakes or a few drops of your favorite hot sauce on top makes a world of difference, highly recommended, especially if you are making for adults.
Even if you choose not to melt cheese on top, popping the nachos in the oven for a few minutes just to warm them through makes a surprisingly big difference to the overall flavor and texture. Don’t skip this step!
For the beans, if you’re short on time, canned kidney beans work perfectly fine here. Just rinse them well before adding them to the pan, if you season and cook the beans they get pretty yummy.
This dish is best served immediately, right out of the oven, while the cheese is still melted and the nachos are still crispy. If it sits around too long the chips go soft, and the cheese might start to harden and nobody wants soggy dry nachos!

I used 2 brands of tortilha chips, but chose the ones you like… I kinda like the combination of cheese tortilla chips with spicy dorito like tortillas as well, and yes i know doritos are so expensive in Europe… but there are other brands, so get the same thing from other brands or supermarket brands 😉
