Ingredients
- Couscous – 250g
- Water – 250ml
- Red Onion – 1
- Yellow Pepper – 1 (or Red)
- Carrot – 1
- Garlic – 2 Cloves
- Raisins – To Taste (A Handful)
- Pine Nuts – To Taste (A Handful)
- Coriander – A Pinch
- Olive Oil – A Drizzle
- Vegetable Stock – 1 Cube
- Paprika – 1/2 Teaspoon
- Coriander Seeds – A Pinch
- Turmeric – A Pinch
- Cinnamon – A Pinch
- Cumin – A Pinch
- Cayenne Pepper – A Pinch
- Pepper – A Pinch
- Salt – A Pinch
Directions
- In a large, deep frying pan over medium heat, add a few drops of olive oil, followed by a chopped red onion, a chopped carrot, and a chopped yellow or red pepper. Sauté for about 10 to 15 minutes until everything is soft, then pour everything into a pot.
- Clean the frying pan and add a drizzle of olive oil followed by two chopped garlic cloves, season everything with salt, pepper, paprika, ground coriander seeds, turmeric, ground cinnamon, cumin, and cayenne pepper, fry for 1 minute, then pour into the pot.
- Then add the water with 1 vegetable stock cube to the pan, followed by chopped parsley, raisins, and couscous, bring to a boil, then cover and remove from heat, let stand for about 5 minutes until tender.
- Pour into a serving dish, use a fork to loosen the couscous, sprinkle a few pine nuts on top, and it’s ready. Bon appétit!
