I know, I know… I’m always making these kinds of puff pastry treats, but what can I say? They’re absolutely delicious!!!!!!!!! And I’m constantly trying new variations, this time around, I’ve paired them with gouda cheese and a creamy garlic mayo that takes these little beauties upgraded to the next level of our Cooking RPG.
This is one of those classic easy party foods that’s incredibly similar to pigs in a blanket or pastry cocktail sausages, the kind of super simple appetizer that everyone gravitates toward at gatherings. Honestly, this is almost not even baking; it’s basically assembling ingredients that you finish off in the oven. But here’s the thing, and I kinda have to say this hehehe, adjusting just a bit of the ingredients, adding a few more spices, maybe some bacon, and a little sprinkle on top with seeds or spices makes a world of difference between a frozen, already-made basic sausage roll and a golden, crunchy, savoury delight. Just saying…. Just saying….
The beauty of these little rolls lies in their simplicity and the magic that happens when that puff pastry hits the oven. The cheese melts into gooey perfection, the sausages get beautifully caramelized, and that garlic mayo? Pure genius for dipping. Its simple, delicious and kids and parents love them! For a kids party make it simple, skip the stronger spices, give them mayo, mayo with ketchup, maybe ranch! You are done! For adults, add some Cayenne pepper or chili, maybe some hot sauce with the mayo or this garlic aioli, and you are still winning! It’s that good, and it’s that simple! Let’s check the recipe!
Golden Puff Pastry Sausage Rolls with Garlic Aioli

Come on, these are my goto kind of jam when im hosting or bringing something for a party, maybe not the sauce hehehe, but you can bake a ton of these really quickly and they are absolutely delicious
Ingredients
- Puff Pastry – 1 roll (200g)
- Sausages – 16 (Cocktail Sausages)
- Gouda Cheese – 8 Slices
- Mayonnaise – 3 Tablespoons
- Garlic – 4 cloves
- Egg – 1 (for brushing)
- Chives – A Pinch
- Sweet Paprika – A Pinch (Or Smoked)
- Oregano – A Pinch
- Olive Oil – A Few Drops
- Pepper – A Pinch
Directions
- Start by frying the sausages in a frying pan with a drizzle of olive oil, season with a pinch of paprika and oregano, and fry until the sausages are golden brown (You do this get a better Maillard reaction, basically the chard on the sausage will make it taste way better, also it’s a good change to get the sausages well seasoned).
- Preheat the oven to 200ºC and line a baking tray with non-stick paper.
- Roll out the dough and cut it into 16 segments, then place a piece of cheese and a sausage on each one, season with a pinch of pepper, sweet paprika, and oregano.
- Now roll up each sausage and place on the baking tray, whisk an egg and brush each roll, finally sprinkle with a little pepper and bake for about 30 minutes until golden brown (note, you are just cooking the puff pastry, the sausage and cheese are already ready to eat, read a direction on the puff pastry for perfect times/temperatures).
- For the garlic aioli, combine chopped garlic and chopped chives with 3 tablespoons of mayonnaise in a small bowl, mix everything together, then add another pinch of chopped chives on top.
- That’s it, serve with the freshly made rolls, these are good just out of the oven, but they are also good cold on the day and the day after, no problem, enjoy!



Don’t skip the pre-frying step! Lots of people do… this ensures your sausages are perfectly cooked and adds that extra layer of flavor from the caramelization.
If your puff pastry is too cold, let it sit at room temperature for a few minutes to make rolling easier. If it’s too warm, pop it in the fridge for a bit.
You can assemble these rolls earlier in the day and keep them covered in the refrigerator until ready to bake. Just add a few extra minutes to the baking time if baking from cold.
As mentioned, try adding some crispy bacon bits, sesame seeds, or everything bagel seasoning on top before baking. A touch of Dijon mustard inside each roll also works wonders, be creative and make them for your audience, for kids more sweet and savoury, for adults a bit more bold, maybe spicy.
Make the garlic sauce beforehand, a day before or at least 1 hour ahead if possible, so that the flavours meld beautifully when given time to sit together, note that raw garlic needs time to mellow out
Also unlike other pastries you can reheat them in the oven, just a couple of minutes in a hot oven, they will be less juicy but they will be more crispy ;D
