This is a little pastry that turned out super awesome, a mix between a quiche and a savoury muffin, these mini shrimp quiches were supposed to be salmon based, but I forgot and used the salmon in another dish so hahahah… nothing like finishing off a bag of shrimp, it turned out delicious anyways even though if I had to repeat it I would add a bit more parmesan and maybe some more pepper and paprika (I adjusted on the recipe), just to make them even more scrumptious.

These are amazing snacks, perfect for parties, they’re like mini creamy tartlets with shrimp that will have your guests coming back for more. The combination of sautéed vegetables, tender shrimp, and that crispy puff pastry creates a bite-sized delight that’s both elegant oh oh ohhhh and satisfying. Trust me, once you serve these beauties, nobody’s going to miss those tired old shrimp cocktails! ;D

The best part? They’re surprisingly easy to make and look absolutely stunning on any appetizer platter. The golden puff pastry cups filled with that creamy, savoury custard and topped with a perfect shrimp make these little quiches irresistible. If I do say so myself! Let’s check it out!

Homemade Mini Shrimp Quiche Bites

Why settle for basic shrimp cocktails when you can serve these adorable little bites of heaven?

Ingredients

  • Shrimp – 18
  • Onion – 1
  • Carrot – 1
  • Garlic – 3 Cloves
  • Mushrooms – 80g
  • Puff Pastry – 1 Roll (+/- 200gr)
  • Eggs – 3
  • Cream – 100ml
  • Parmesan Cheese – Grated to Taste
  • Olive Oil – A Drizzle
  • Sweet Paprika – A Pinch
  • Pepper – A Pinch
  • Salt – A Pinch

Directions

  1. Start by starting a sautéing in a frying pan, add a drizzle of olive oil, followed by the finely chopped carrots, onions, and garlic, and leave to fry.
  2. When the onions and garlic are golden brown, add the mushrooms and cook for another 2 minutes, taste and season with salt, pepper and paprika.
  3. Preheat the oven to 200ºC (392°F) (or as recommended on the puff pastry package), cut circles of dough using a mold or glass, and place them in a muffin tin lined with muffin cups or nonstick paper.
  4. In a bowl, whisk 3 eggs with 100ml of cream, season with salt and pepper.
  5. Then spoon the sautéed mixture into each mold, add pieces of chopped shrimp, followed by the cream mixture and finally a shrimp on top, sprinkle generously with Parmesan cheese.
  6. Bake for about 30 minutes until the pastry is crispy and the cream is cooked, and that’s it! Bon appétit!
Notes: The flavor overall turned out good but as you know shrimp has little flavor, so you can always increase the spices or add more cheese or add some sauce to make these quiches a bit more decadent ;D

Don’t skimp on the parmesan! Cheese makes everything better in these little bites.

Make sure your vegetables are finely chopped so they fit nicely in the mini quiches and cook evenly.

The puff pastry should be cold when you cut it, this makes it easier to work with and helps it puff up beautifully in the oven.

Keep an eye on them towards the end of baking, you want that gorgeous golden color on top, but not burnt edges.

Feel free to customize the filling! Feel free to swap proteins or add extra veggies you love.

For an extra flavor boost, try adding a squeeze of lemon juice, quark cheese or sour cream to the egg mixture or garnish with fresh herbs before serving.

These can be made ahead and reheated, making them perfect for party prep. Just pop them in a 180°C (350°F) oven for 5-7 minutes to crisp them back up.
