Hehehe, more recipes with just 3 ingredients… I have to admit, though, this one came out pretty good but fell just a little short of its potential. It needed something with a bit more punch than mayo alone, a little heat, some cheese, or a pat of butter to really take it to the next level. But hey, I was having one of those days and had leftover chicken lying around, so toast it was!

The chicken had been roasted and well seasoned the day before. All I had to do was shred it. Just watch out… you don’t want the chicken too dry. Well it's just leftover chicken, two slices of bread, and a little mayo, sometimes that's all the inspiration you need. I know this is a super simple toast recipe, nothing too fancy. I sometimes wonder if anyone actually needs these instructions, but honestly, what we all really want sometimes is just a little nudge to try something new.

Ingredients

  • Bread – 2 slices (Rustic Bread)
  • Chicken – 1 (Cooked Leg)
  • Mayonnaise – 1 Spoon

Directions

  1. Place the chicken on one of the slices, spread a little mayonnaise on the other, close the sandwich, and grill it on a sandwich press grill.
  2. Once it’s golden brown, it’s ready to eat! That simple!
Notes & Tips: As mentioned above, don’t be shy with the fillings. The chicken here was juicy and well-seasoned, but a sandwich like this really benefits from a slice of cheese or a smear of mustard to truly shine.

Day-old roasted chicken works brilliantly here, the leftover flavors are actually deeper and more developed after a night in the fridge.

If your chicken feels a bit dry, add a tiny splash of olive oil or a drizzle of the pan juices when shredding to bring it back to life.

No sandwich press? A regular non-stick skillet with a heavy pan pressed on top works just fine, press it down and flip halfway through.

Want to upgrade this toast without complicating it? Add a thin slice of gouda, mozzarella, or even a smear of Dijon mustard before closing the sandwich. You’ll thank yourself.

Hell go wild with seasonings to make it your own, from curry to cayenne pepper, the mayo will help it all spread and be creamy anyways! 😀

Like i said above you can always just add some butter to the outside of the bread just to make it that much more golden and delicious.
