This is one of those recipes I wasn’t sure I should even publish hehehe, im like… im just seasoning avocado and putting on a toast, yeah but then i have ppl saying what a great idea and i forget that sometimes its not the recipe its inspiration to try new things!

So yeah it feels like a lazy guacamole, a pinch of cilantro, and some toasted bread, and that’s all there is to it, but you know what its pretty good and its better tasting and healthier than anything coming from a jar….

It’s creamy, it’s fresh, it’s got that little kick from the lemon, and it comes together in about ten minutes, and if you have good balance, you dont even have to use plates heheheheh, lets get to the recipe! Ohh ohh and its vegetarian… hey hey heyyyy 😉

This is a classic healthier type of sandwich, good like it is as a light but filling snack, but also great as a side, like a dip or part of a filling for a wrap.

Ingredients

  • Bread – 2 slices
  • Avocado – 1/2
  • Cilantro – A pinch
  • Lemon Juice – 1 teaspoon
  • Olive Oil – 1 teaspoon
  • Pepper – A pinch
  • Salt – A pinch

Directions

  1. Start by opening the avocado and removing one half, you can leave the other half with the pit attached as is and wrap it up if you plan to use it later (it keeps well in the fridge for a few hours like that). Scoop the avocado flesh into a bowl (or just make double!).
  2. Finely chop some cilantro and add it to the bowl. Then, season the mixture with a little lemon juice, olive oil, and a pinch of salt and pepper. Mash everything together well with a fork—there’s no need to create a smooth paste, a slightly rustic texture is what you are looking for.
  3. Toast the bread slices, divide the mixture between them, and that’s it, easy peasy, enjoy!
Notes & Tips: Pick a ripe avocado. It should give slightly when you press it gently, not feel rock hard or mushy. If it’s hard, leave it on the counter for a day or two (a paper bag with a banana speeds it up).

Keep the pit in the half you’re saving, wrap it tightly, and put it in the fridge. The lemon juice in the mix also helps keep the color from turning brown.

Use bread with some body, like sourdough, whole grain, or a rustic country loaf. Soft sandwich bread can get soggy fast under the avocado.

Toast the bread well so it’s crunchy. That contrast with the creamy avocado is half the fun.

Taste before spreading. Avocados vary a lot, so you might want a tiny bit more salt or lemon.

Make it right before serving. It’s best fresh, and the toast stays crisp that way.

As a dip, serve the mashed avocado with tortilla chips, pita chips, or raw veggie sticks.

For a wrap, spread it on a tortilla and add some greens, tomato, or whatever you have in the fridge.

If you want to create a variation, maybe with the other half, add red pepper flakes, a fried egg, or sliced tomato to the toast, but honestly it’s great as it is.
