This was one of those pandemic locked at home, i want a hamburger with a real hamburger buns type of deals, but I couldn’t find one of those brioche buns, only the basic hamburger buns, you know the kind its white bread molded to look like hamburger bread, even basic hot dog bread is better, so…. it was destiny that i need to get my hand dirty and kill some mo…. I mean make some fresh ones at home, right right! ;D
Do note that this dough is not the classic French brioche bun, which is a little bit fluffier, creamier and sweeter. This bun has a similar texture and appearance, but it’s not sweet and has a slightly denser texture, so a more American type of Hamburger bun, which helps the burger to hold together without falling apart.
And i have to admit, these came out pretty nice hehehehe pat myself in the back, the dough is fluffy with a crunchy exterior, just what I wanted! And these buns were great for that burger, and i ate the rest with some jam and butter, yum yum. Let’s go get that recipe…
Homemade Hamburger Brioche Buns

Ingredients
- Flour – 320gr
- Sugar – 1 Tablespoon (shallow)
- Baker’s Yeast – 10gr (One sachet)
- Salt – 1 teaspoon
- Eggs – 2 litres
- Milk – 220ml
- Butter – 56gr
- Egg – To brush on
- Sesame Seeds – To sprinkle (Optional)
Directions
- Combine the flour, sugar, yeast and salt in a bowl or in the bowl of your mixer.
- Separately on another bowl, add the milk and eggs and whisk well.
- Then add the liquids little by little, whisking all the time, don’t add everything, just add enough to absorb all the flour (in my case there was only a little left over).
- Now add the softened butter in cubes, knead for another 8 minutes, you’ll create a soft pillow like dough.
- Take it out onto a floured surface and shape it into a smooth ball, pour it into a bowl greased with olive oil, cover with cling film and a towel and leave in a warm place to rise for at least 2 hours until it has doubled in size.
- Remove the dough to a floured surface and divide it into 6 parts, shape each into a ball and place on a baking tray lined with non-stick paper.
- Cover the tray with a towel and leave the buns to rise for another hour until they have doubled in size.
- Then preheat the oven to 190ºC, brush each bun with whisked egg and sprinkle with sesame seeds.
- Bake in the oven for about 18 to 19 mins in an oven with ventilation or about 20 to 22 minutes in a regular oven, until they are nicely browned, remove from the oven and leave to cool, bon appetit.
