Ruby Chocolate Mousse

For Valentine’s Day, I thought, hummm how about making a pink chocolate mousse! Yes excellent idea, uhhh how about using Ruby Chocolate instead of food coloring? Bingo! No… apparently ruby chocolate for cooking isn’t pink hahaha, it’s more between crimson or a shade of coral, which after adding eggs and sugar, the final colour turns into a sort of cream or salmon colour, well what can i do hahaha ;D

Btw encase you don’t know Ruby Cocoa (the basis of Ruby Chocolate), isn’t a new breed of cocoa, it’s just a different way of processing cocoa, normally when fermented, it acquires the dark colour and intense flavour we know, in ruby chocolate the process (still kind of a secret) is a bit diferent and creates a chocolate with a pink color and a sort of more floral aftertaste.

Well i failed in the color department, well half fail, i do enjoy these hues and its always better than food coloring and white chocolate, that has zero cocoa, altough now i understand that Nestlé and the sorts when they sell “Ruby based Chocolates”, they do add some coloring agent to make it way more pink than it should be, anyways i did enjoy the mousse its a interesting variation of a classic chocolate mousse and a cute surprise ;D

Ruby Chocolate Mousse

Ruby Chocolate Mousse is a delicious and wonderful vibrant salmon color way better than any shade of pink, just that makes it taste 200% better hehehe.

Ingredients

  • Ruby Chocolate – 200gr
  • Butter – 60gr
  • Eggs – 6
  • Sugar – 90gr
  • Sprinkles – To Taste and Sprinkle 🙂

Directions

  1. Start by melting the ruby chocolate with the butter in a bain-marie (double boiler) until very creamy.
  2. Separate the egg yolks from the egg whites and whisk the egg whites until stiff peaks form, set aside.
  3. Now whisk the egg yolks with the sugar until creamy.
  4. When the ruby chocolate is creamy enough, pour it into the egg yolk and sugar mixture, whisking constantly to prevent the egg from curdling.
  5. Finally, fold the egg whites into the chocolate mixture until creamy.
  6. And that’s it, pour into bowls and sprinkle some cute sprinkles on top take it to the fridge for a couple of hours to set, Happy Valentine’s Day! ;D
Notes: This is a basic chocolate mousse recipe, so you can change it to the normal cooking chocolate, as well as you can add other sprinkles, i think shaved black chocolate in a chocolate mousse is always a winner!
