Spicy Roasted Spare Ribs Recipe

Spicy Roasted Spare Ribs

With a spicy dry rub and a deliciously sweet and sticky glaze, these ribs are succulent, juicy, and are sure to be a hit.

Ingredients

  • Pork Spare Ribs – 1kg
  • Bay Leaf – 1
  • Olive Oil – 10ml (+/ 2 Spoon Fulls)
  • Smoked Paprika – 2 tbsp
  • Oregano – 1 pinch
  • Garlic Powder – 1 pinch
  • Cayenne Pepper – 1 pinch (Generous)
  • Pepper – 1 pinch
  • Salt – 1 pinch

Directions

  1. In a pan add the spare ribs with a dash of olive oil and a pinch of salt, fry the outside a little in the olive oil until golden.
  2. Then add hot water until the meat is completely covered, add the bay leaf and let it cook over medium heat/broiling for about 25 minutes.
  3. Preheat oven to 180ºC/350ºF/gas 4 and line a baking tray with non-stick paper.
  4. Remove the spare ribs from the water, let them drain and then pat it down to remove all the moisture, put them on the baking tray, season them well on all sides with paprika, oregano, cayenne bell pepper, garlic powder, pepper and salt, adjust the spiciness to taste.
  5. Bake for about 40 minutes, I suggest about 20 minutes, then flip and 20 minutes more on the other side and if you want to flip again just to dry out the side with more meat.
  6. Remove from the oven and let it rest a bit, it’s ready to serve just like that cut into chops or remove the bones, enjoy!
Notes: You can also do something similar by steaming the spare ribs or cooking in a pressure cooker before putting it in the over to roast. I used the leftover ribs to make delicious rice and sandwiches ;D
