Sweet Fresh Cheese Pies • Queijadas de Requeijão de Beja

Delicious and traditional sweet cheese pies from the Alentejo region of Portugal, very typical of a Portuguese Easter.
Ingredients
- Water – 50ml (Warm)
- Lard – 15gr
- Butter – 15gr
- Egg – 1
- Unleavened Flour – 130gr
- Salt – A pinch
- Requeijão Cheese – 400gr (from Sheep)
- Eggs – 3
- Egg Yolks – 2
- Sugar – 200gr
- Butter – 30gr
- Flour – 30gr
- Cinnamon – 1 level teaspoon
Directions
- We start with the dough. In a bowl, add the water followed by a generous pinch of salt, the lard, butter and let everything melt well and cool.
- Then add the egg and flour, mix everything well until you have a dough, knead it a little and set it aside.
- For the filling, put the rest of the ingredients in a bowl: the requeijão cheese, 3 eggs, 2 egg yolks, the sugar, 30g of butter, the flour and a pinch of cinnamon. Use a hand blender to blend everything together until you have a thick, velvety cream.
- Now you’re going to roll out the dough, note that the dough doesn’t cooperate much, but roll it out until you have a very thin section, use a glass to cut it out and place it in a buttered mould, note that once it’s in the mould the dough becomes much more flexible and you can easily stretch it to cover the mould well.
- Preheat the oven to 180ºC.
- Pour the filling into each tin/mold and bake for about 15 to 20 minutes until golden brown, remove from the oven and leave to cool, then you’re done, bon appetit and Happy Easter!
