Creamy Mini Cheese Pies

Valentine day is tomorrow, so how about… some creamy mini sweet cheese pies, these are something between a pudding and a cheesecake, since they use the laughing cow brand triangle cheeses, if you cant find these or any similar cheese product will do, you can also use cream cheese but that will create a more creamy version… the cheesecake kind hehehe

I love this recipe because its super simple and super versatile, i think some of the thickening agents that are used in these triangle cheeses that help make them thick help make these pies extra creamy and thick as well, this is the basic recipe, but on the notes ill give you several variations that you can make, lets check the recipe.

Fantastic recipe for a sweet cheese pie, with a creamy sweet filling and a crispy pastry, perfect for valentines.

Ingredients

  • Shortcrust Pastry – 1 Roll (+/- 200gr)
  • Eggs – 2
  • Sugar – 100gr
  • Butter – 50g
  • Processed Cheese – 8 Triangles (+/- 125gr Laughing Cow Brand)
  • Powdered Sugar – To sprinkle

Directions

  1. Preheat the oven to 180°C and line 12 muffin pans with non-stick paper.
  2. Cut out circles of shortcrust pastry, place them in each muffin pan and prick the bottom of the shortcrust pastry.
  3. In a small pan, melt the butter over medium/low heat, add the sugar and let it dissolve completely.
  4. Lower the heat, beat the eggs and add them to the pan with the butter and sugar, stirring constantly as to prevent the eggs from curdling.
  5. Finally add the triangles of melted cheese (like the ones in the Laughing Cow brand), mix everything until you create a creamy mixture, if the eggs or cheese curdle a little use a hand blender to break them up to make a smooth cream.
  6. Then poor the cream on each muffin pan, in my case it was +/- 2 tablespoons for each pie, bake it in the oven for about 20 to 25 minutes until they are golden brown on top, they will puff a little and then go back down after they are cold (like a soufflé).
  7. After they are cold, serve them plain or sprinkled with a little powdered sugar or jam, enjoy.
Notes: I used shortcrust pastry because i wanted a more thin pastry and it was on promotion hehehe, but you can use puff pastry if you prefer.

You can add to the cream vanilla, orange or lemon peel, spices like pumpking spice, powdered chocolate, basically anything you can add to a pudding you can add here, just don’t add anything too liquid, to prevent from the filling becoming too liquid.
