Oh, nothing like a delicious chicken toast that’s especially good if you’ve got leftover cooked chicken sitting around. You can throw it together in no time flat, basically all you do is shred the chicken, season it with mayonnaise, pile it onto some nice slices of rustic bread with cheese, and grill it until the cheese is completely melted and the bread turns crisp and golden, gotta love it.

The chicken I used for this was leftover from a delicious lime roasted chicken, just shredded the leg and thigh, super easy, tender and delicious, perfect for this creamy crunchy toast, lets get to it!

When i get some leftover chicken.... ohhh better go to the bakery to get some bread and make me a toast! ;D Yeah!

Ingredients

  • Rustic Bread – 2 Slices
  • Chicken – 100g (Cooked and Shredded)
  • Flamengo Cheese – 3 Slices
  • Mayonnaise – 1 Tablespoon
  • Pepper – A Pinch
  • Oregano – A Pinch
  • Butter – For Spreading

Directions

  1. Start by shredding the chicken and seasoning it with a pinch of dried oregano and pepper, then mix in the mayonnaise (in this case, the chicken was already well-seasoned, so no extra seasoning was needed, if your chicken is plain or lightly seasoned, feel free to add more spices like paprika or make it more peppery with pepper and cayenne).
  2. Now, spread the chicken onto one slice of bread, top with the cheese, and place the second slice of bread on top. Toast the sandwich until the cheese is thoroughly melted and the bread is crispy.
  3. Once it is done to your liking, remove it from the toaster, spread a little butter on the top, and it is ready to eat. Enjoy!
Notes & Tips: If your bread is thick, warm it in the toaster for a few seconds before assembling so the middle heats through at the same time the cheese melts, otherwise you can end up with a cold center and a burnt crust.

Flamengo cheese is a mild, semi soft Portuguese cheese. If you can’t find it, Edam, Gouda, or even a mild cheddar will melt beautifully and give you a similar creamy result.

A cast iron skillet with a lid, or a sandwich grill press, works great here since the trapped heat melts the cheese faster without over toasting the bread.

If your chicken is on the dry side, add a touch more mayonnaise, or a small spoonful of sour cream, to bring back some moisture before you pile it onto the bread.
