Sink your teeth into these incredible portuguese cod fritters, yes another portuguese classic recipe hehehehe the joy (no sarcasm)! These bad boys are not just a snack; they can make a fantastic meal or a fabulous picnic treat. One of the greatest things about this dish is its versatility, wrap them up in a sandwich the next day or just enjoy them as they are.

Plus, they are easy to make and you can use leftover cod or using smaller quantities of cod and more of batter. Although I cooked a fillet of cod to whip up these fritters, more often than not, i’m making these with some leftover cod. This classic recipe is all about creamy milky textured fritters. You can also make these on any size or format, you can make balls or like i did here more flat “hamburguer” like patties so i can use some later in some
sandwiches, but feel free to make them any size you fancy. Let’s dive into the recipe!

Ingredients

  • Salt Cod – 220gr (Cooked and Flaked)
  • Eggs – 3
  • Onion – 1 Small
  • Garlic – 2 Cloves
  • Flour – 50gr
  • Milk – 50ml
  • Olive Oil – 1 Teaspoon
  • Baking Powder – 1 Teaspoon
  • Cilantro – A Pinch
  • Pepper – A Pinch
  • Salt – A Pinch
  • Oil – For Frying (I used Fula oil, a classic portuguese oil brand!)

Directions

  1. In a large bowl, mix the flaked cod, 3 eggs, finely chopped small onion, 2 cloves of minced garlic, flour, baking powder, milk, olive oil, chopped cilantro, salt, and pepper.
  2. Stir until it reaches an oatmeal-like consistency. If it’s too runny, add a bit more flour; if it’s too thick, a touch more milk.
  3. Heat up the oil in a frying pan (about a finger’s depth). When hot, pour dollops of the batter and fry both sides until golden. Set on absorbent paper.
  4. Taste a piece; adjust seasoning if needed with more salt and pepper. Fry the rest of the batter, and there you have it—enjoy your delightful treat!
Notes: To intensify flavors, consider adding herbs or spices like paprika or nutmeg. For a lighter version, substitute part of the flour with breadcrumbs.
