Okay, here I go breading everything again, hahahaha, I just can’t stop! Today it’s turkey, and I have to say, breaded turkey is absolutely fantastic, especially the next day in a sandwich (with a little lettuce, tomato, and mayo). Honestly? It tastes really, very, suspiciously close to a great fried breaded pork sandwich. True story! Sure, the flavor is different, but the texture is so similar that with the right sauces it fools you pretty well, and since turkey is way healthier, it ends up being a great variation worth making on the regular.
Also, breading really does wonders for turkey. Turkey, kind of like chicken, suffers from not having a ton of deep flavor on its own, so well-seasoned, coated in breadcrumbs, and fried? A thousand times more delicious. I had bought 4 nice turkey cutlets and only made 2 breaded, and after tasting them I immediately regretted not doing all four, hahahaha. It really wasn’t that much more work, and I would have had 1 or 2 more amazing meals out of it. Lesson learned! ;D Let’s check the recipe!
Crispy Fried Breaded Turkey Cutlets Schnitzel

Gotta love these beautiful crispy fried breaded turkey cutlets, easy to make and pretty yummy delicious.
Ingredients
- Turkey – 2 Steaks (Or +/- 1 Breast)
- Eggs – 2 M
- Breadcrumbs – 100g
- Lemon – 2 Tablespoons of Juice
- Cooking Oil – For Frying (Sunflower Oil)
- Paprika – A Pinch
- Pepper – A Pinch
- Salt – A Pinch
Directions
- Start by preparing the turkey steaks. It’s okay if they’re thicker, just make sure they’re roughly the same thickness so they cook evenly. Also, the thicker the steaks, the lower the oil temperature should be to avoid burning only the outside while leaving the inside raw.
- Flatten the steaks slightly with a rolling pin, then season them with salt, pepper, paprika, and lemon juice. Let them rest for about 15 minutes.
- After 15 minutes, put a plate with 2 whisked eggs seasoned with salt and a plate with breadcrumbs.
- Prepare a deep frying pan with vegetable oil (or a deep fryer) and heat it over medium heat until it reaches the right temperature.
- Remove the turkey steak from the plate and pat them dry with kitchen paper to remove excess moisture. Then dip it in the whisked egg and finally coat it in breadcrumbs. When coating the steak in breadcrumbs, gently press the steak against the breadcrumbs to ensure it’s well coated and it sticks well.
- Finally, fry in oil. When one side is golden brown, flip and fry the other side until golden brown all over.
- Remove from the oil and place on kitchen paper or a wire rack to drain excess oil. I served these breaded turkey pieces with a nice kale salad, but you can serve them with whatever you like, or even better, with bread inside a sandwich hehehe! Enjoy!






If you want to switch things up, swap the regular breadcrumbs for panko (Japanese breadcrumbs). Panko creates a lighter, airier, crunchier crust that is honestly a bit addictive.
With pork cutlets it’s always a good idea to pound the meat thin or slice it super fine, because pork doesn’t have much time to tenderize during frying. Turkey is different. Just using the rolling pin to flatten it a bit (mainly to even out the thickness) is totally enough, and it comes out wonderfully tender and juicy.
A simple way to check if your oil is ready without a thermometer is the breadcrumb test. Drop a small pinch of breadcrumbs (or a small piece of bread) into the oil. If they start bubbling and turning golden quickly, you’re good to go. As always, be careful around hot oil, no rushing, keep the kids away from the stove while frying and right after, because that oil stays dangerously hot even off the heat.
The day after sandwich situation is genuinely something special. A cold or reheated breaded turkey cutlet on a roll with mayo, lettuce, and tomato is one of those fridge leftovers that you actually look forward to. Make extra cutlets just for this. ;D
