I absolutely love fruit cakes, and today we have another delicious variation on a banana cake. The batter is similar to that of a slightly sweeter banana bread topped with apple pieces and raisins. I made this cake to use up some bananas and apples that were getting too ripe, and it turned out as a beautiful and delicious cake… patting myself in the back
Since its Saint Martins season in Portugal, this is also a perfect cake for the occasion, just saying, since most traditional portuguese cakes for this season tend to be more around chestnuts, pumpkin and sweet potatoes, so a different change of pace with bananas hehehe.
This is (in my humble opinion) the perfect kind of cake for parties, it’s not too sweet, but it has a fantastic dense texture that makes it super easy to cut perfect thin slices and with apple and raisins you have more textures to experiment with, also at the end of the day you can cut slices of the cake and freeze and then when you want a freshly made slice just put a slice in the toaster, fantastic! ;D A real delicacy, let’s get to the recipe!
Rustic Banana Apple Cake

Nothing like the comforting flavors of a Rustic Banana Apple Cake, where ripe bananas and sweet apples come together in a delightful harmony. Add some plump raisins, this cake is a perfect blend of sweetness and texture, making it an ideal treat for any occasion.
Ingredients
- Butter – 120gr
- Sugar – 180gr
- Eggs – 3
- Bananas – 390gr (+/- 3)
- Flour – 260gr
- Baking Powder – 1 teaspoon
- Bicarbonate of Soda – 1 teaspoon
- Apple – 1
- Raisins – Just sprinkle on top
- Salt – A pinch
Directions
- Start by preheating the oven to 160ºC and preparing a castle tin lined with non-stick paper, buttered and dusted with flour, set aside.
- In a large bowl, add the sugar and soft butter, whisk until smooth, then add the eggs one by one, whisking again until everything is combined.
- In a separate bowl, add the bananas and mash them with a fork until they form a puré, set aside.
- In another bowl, add the flour, baking powder, bicarbonate of soda and a pinch of salt.
- Now add the banana to the sugar and butter mixture, mix well and finally add the sieved flour, mix everything well until you have a creamy, homogeneous dough, there’s no need to whisk.
- Pour the batter into the tin, top with the apple cut into small cubes and a few raisins, bake for about 50 minutes until golden brown, poke a toothpick in the middle of the cake and if it comes out dry it’s ready, Bon Appetit and Happy Saint Martins!

Yeah fruit and in this cake banana, doesn’t just give the flavour, but also part of the sweetness and creaminess to the cake, something that its hard to replicate with just oils and butter, thank you for the comment!
