Homemade Chocolate Panda Sugar Cookies

The quickest way to anyone's heart is through their chest!!!! But the next best thing is through the tummy, nothing like these cute crumbly buttery cookies, instant success!
Ingredients
- Flour – 310gr (With no Baking Powder)
- Butter – 170gr
- Sugar – 155gr
- Vanilla – 1 teaspoon (+/- 5ml Extract)
- Egg Yolks – 3
- Chocolate Powder – 2 Tablespoons
- Salt – A pinch
- Chocolate – 100gr
Directions
- Combine the butter cut into small cubes with the sugar in a bowl and whisk until blended.
- Then add a teaspoon of vanilla, followed by the 3 egg yolks and a pinch of salt, mix until everything is combined.
- At the end, add the sifted unleavened flour, mix everything together until you get a dough, knead a little until you create a ball of dough (but as I said above, don’t mix too much), now separate into 2 balls, one you will add the chocolate powder, mix again a little until the chocolate spreads, wrap both balls in cling film and refrigerate for 1 hour or up to 24 hours.
- When you want to make the cookies, take a ball of dough, stretch it between 2 sheets of cling film (so it doesn’t stick), then use a mold and cut out the cookies and take them to a tray to refrigerate (because if you take the warm cookies to the oven they will melt, it’s better to take them to the oven very cold, so the cookies bake better), with the leftover dough, create a ball again and stretch and cut again.
- Repeat for the other ball of dough and put all the cookies in the fridge for at least an hour to chill.
- When it’s time to bake the cookies, preheat the oven to 170ºC and line a baking tray with non-stick paper.
- Pour the cookies onto the tray and bake, depending on the thickness and type of oven, they should take between 8 and 12 minutes to be ready, you can tell when the edge of the cookies is browning so it’s time to take them out.
- Remove from the tray and let the cookies cool and crisp up, in the case of these panda cookies, after they had cooled it was time to melt 100gr of chocolate and use the chocolate to glue the cookies together and that’s it, ready to eat hehehe, bon appetit!
