Creamy Greek Yogurt Cake with Apples

Greek yogurt is a staple in healthy baking, offering a creamy texture and a tangy flavor that enhances cakes, making them moist and rich. The distinct characteristic of Greek yogurt is its thick consistency, achieved by straining regular yogurt to remove the whey, what makes Greek yogurt well “Greek”, is that this technique was popularized in Greece. Also in baking, Greek yogurt acts as a versatile ingredient, contributing to the cake’s density and creaminess with its fat content while also balancing sweetness with its subtle tartness.

This Greek yogurt cake recipe just shows how yogurt in general is a delicious and versatile ingredient, that not only make a cake better, more rich and moist but also cuts on other fats that you normally have to add to cakes to make them more soft.

In this case adding fruit, such as apples, not only adds more texture but also complements the cake’s richness. I “designed” this recipe for a smaller pan, less than 20cm, but i wanted todo on this kind of castle mold/pan, so it’s a bit smaller, if you want a larger cake, use a smaller pan, so lets check this recipe!

Creamy Greek Yogurt Cake with Apples

Delicious and creamy Greek yoghurt cake, very sweet but with a slight bitterness from the yoghurt and a little texture from the apple topping.

Ingredients

  • Greek Yogurt – 500gr
  • Sugar – 100gr
  • Flour – 90gr
  • Eggs – 4
  • Vanilla – 1 Tablespoon (Extract)
  • Apples – 2 (sliced for topping)
  • Butter – To grease

Directions

  1. Start by separating the eggs and whisking the yolks with the sugar until you get a very creamy mixture.
  2. Then add the Greek yogurt, the sifted flour and the vanilla extract and mix until everything is well combined.
  3. Whisk the egg whites until hard peaks, peel and finely slice the apples, I used green apples to give it a nice contrast with a tart touch but you can use any kind to your taste.
  4. Finally, fold the whipped egg whites into the batter until you have the cake batter.
  5. Preheat the oven to 180ºC and prepare a loaf tin lined with non-stick paper and greased with butter.
  6. Pour the batter into the tin, cover with the apple slices and bake for about 25 minutes until the top is golden brown and the cake is well baked. Remove from the oven and allow to cool a little before unmolding and enjoy!
Notes: Of course you can use regular yogurt as well as other fruits and toppings to your taste 😀 Things like dried fruits would work just as well!
