  2. Now add the mascarpone and whip again until the mixture is very fluffy.
  3. Now make a very strong coffee (the ideal is simply several very strong espresso coffees), about 400ml at least to be able to soak in the champagne biscuits (these are a long and very crispy biscuits with a bit of sugar on top).
  4. Now assemble the tiramisu, get a pyrex or serving dish, put a layer of mascarpone cream on the bottom and sprinkle with cocoa.
  5. Now soak each champagne cookie stick in the coffee and arrange them on the serving platter until you make a layer of biscuits.
  6. Now cover again with another layer of mascarpone cream and another sprinkle of cocoa.
  7. And repeat the process, make another layer of champagne biscuits soaked in coffee, repeat until you have no more, finish by covering with the remaining mascarpone cream and sprinkling with a nice coating of cocoa powder.
  8. Finally take it to the fridge to set, and that’s it, serve it very fresh, enjoy!
Notes: There are different kinds of biscuits that work well with a tiramisu, also if you can find then, you can change it with a nice and fluffy sponge cake, just cut it 2 fingers thick and soap them with coffee wile the cake is already on the serving dish.
