Heyoooo what could be better than some beautiful butter cookies shaped like little pandas or bunnies? I made half of them vanilla and half of them chocolate… kick it! ;D

The great thing about this kind of cookie is that you can make the dough the day before, and when it’s time to bake you just cut out pandas, bunnies, hearts, whatever you feel like or have cookie molds todo. Or you can bake the cookies a few days ahead, because they keep really well for a couple of days in an airtight container. On the day you bake they are crunchy, and on the next day they turn soft and creamy. Delicious either way, hehehe.

I also used a little chocolate to stick the cookies together, so this amount of dough makes about 30 individual cookies or 15 sandwiched cookies ;D Let’s get to it!

This might seem complicated, but it's really just making cookies and then sticking them together with chocolate. It's pretty easy, and it's very kid friendly to make as well!

Ingredients

  • All-Purpose Flour – 500g
  • Sugar – 250g
  • Butter – 250g (cold)
  • Egg Yolks – 4 (cold)
  • Vanilla – 2 dessert spoons (extract)
  • Chocolate Powder – 2 tablespoons
  • Salt – a pinch
  • Dark Chocolate – 50g
  • Heavy Cream – 40ml

Directions

  1. Start by chopping up very cold butter, you don’t want it to melt, so keep everything pretty chilled.
  2. Combine the butter, flour, egg yolks, vanilla, sugar and a pinch of salt. Mix until a ball of dough forms, try to mix well but not excessively, so the butter doesn’t melt too much.
  3. Divide the dough into two balls. Wrap one in plastic wrap. To the other, add the chocolate powder and mix briefly to create a chocolate dough, wrap this one in plastic wrap as well, and place both in the refrigerator for at least a couple of hours (so the butter hardens and the flour has time to hydrate).
  4. Roll out the dough until it is approximately 1.5 cm thick. Then, using a cutter, cut out the shapes you want, just be sure to have an equal number of each shape so you can assemble the cookies later.
  5. Arrange them on a baking sheet, repeat the process with the other dough, and return everything to the refrigerator for an hour to let the cookies firm up.
  6. When you are ready to bake, preheat the oven to 180ºC (356ºF) and prepare a baking sheet lined with non-stick paper.
  7. Bake for about 14 minutes until golden, then remove from the oven and let them cool down completely.
  8. While the cookies cool down, melt the chocolate with the heavy cream using a double boiler or the microwave (heating in 10-second intervals and stirring to prevent the chocolate from burning, follow the link to know more).
  9. Finally, assemble the cookies by spooning a little chocolate ganache onto them and sandwiching a vanilla cookie with a chocolate cookie, or if you want you can use the same type of cookie for just chocolate ones and vanilla ones. All done, enjoy!
Notes & Tips: If you would rather dip the cookies in chocolate instead of sticking them together, melt the chocolate on its own without the cream, so when it dries it will be nice and firm. You can also add color to the dough. A few drops of food coloring and you have pink cookies, feel free ;D

These cookies are a variation of classic sablé cookies, but these work with any cookie that can hold a firm shape for cookie molds, so sugar cookies or butter cookies will work good as well.

The cold is your friend. If the dough gets soft while you are cutting shapes, pop it back in the fridge for 10 minutes before continuing.

Lightly flour your rolling pin and work surface, or roll the dough between two sheets of parchment paper to stop it from sticking.

Dip your cookie cutters in flour between cuts so the edges stay clean and sharp, especially for small details like panda ears. Gather the scraps and re-roll them once. If you re-roll too many times the cookies get tougher.

Resting the cut shapes in the fridge for 1 hour is what helps them keep their shape in the oven, so don’t skip it.

Cookies bake at slightly different rates depending on size, so keep an eye on smaller shapes and take them out when the edges are golden.

Let the ganache thicken for a few minutes before assembling. If it is too runny it will slide right out of the sandwiches.

Use a piping bag or a small spoon for the ganache, and press the cookies together gently so it doesn’t squish out the sides.
