Low Carb Cauliflower Rice with Fried Egg

So I picked up this beautiful, massive head of cauliflower and then found myself staring at it, wondering what the heck to do with all that cauliflower. My mom came to the rescue and told me to make some cauliflower rice (also called cauliflower couscous, it’s all the same thing). Basically, you pulse chop up the cauliflower, season it, and fry it up. The result? Absolutely incredible, at least for me! 😀

The texture is fantastic, really similar to couscous/rice and the flavor is mild and way less intense than boiled cauliflower. I originally made this to go with steak and eggs, but after tasting it, I ditched the steak.

The egg was more than enough, and I devoured this cauliflower rice! It’s seriously delicious and I totally recommend it if you want something different from the usual rice or pasta. Plus, it’s an amazing alternative to rice, nutritious but way less calorie dense. I know it sounds weird, but it tastes awesome and it’s a pretty easy light meal or a nice break from plain old rice hehehee. Five stars, let’s get to the recipe, it’s super simple!

Low Carb Cauliflower Rice with Fried Egg

Nothing like a quasi vegetarian dish for a change, this is quite a simple recipe, that i do quite often, everytime cauliflower is on sale ill roast some and make some cauliflower rice 😀

Ingredients

  • Cauliflower – 1/2 head
  • Olive Oil – A drizzle
  • Egg – 1
  • Cilantro – A pinch (optional)
  • Pepper – A pinch
  • Salt – A pinch

Directions

  1. Start by breaking up the cauliflower head. There’s no need to trim the stalks, use the whole thing. Put it in a food processor and chop until you have grains the size of rice.
  2. Remove the chopped cauliflower to paper towels or kitchen paper. You’ll do this because when you chop the cauliflower, it will release too much water. Put a little more paper towel on top and press down a little to remove most of the excess water.
  3. Then pour the cauliflower into a frying pan, the largest one you have so that all the cauliflower has a chance to toast, season with a drizzle of olive oil and a pinch of salt.
  4. Now cook over medium heat for about 6 minutes, or until it’s to your liking. If you want, you can toast it more, but cauliflower cooks quickly, so taste it and adjust the salt, when its delicious take it out.
  5. Then I used the same frying pan to fry an egg, seasoned it with salt and pepper, and put it on top with a pinch of cilantro, hehehe, perfect! ;D
Notes & Tips: This is an ideal side dish if you’re watching calories, it’s nutritious, low-calorie, and easy to make!

Removing excess moisture is key to getting that perfect “rice” like texture instead of mushy cauliflower, a bit like to make perfect fried rice you need quite dry already cooked rice.

Try adding garlic powder, red pepper flakes, or even a squeeze of lemon juice for extra flavour.

Top with your favourite protein, eggs work great, but so do grilled chicken, shrimp, or tofu.
