This recipe makes enough dough for 2 big sized pizzas (like this one) or 4 small pizzas, and the sauce is enough for about 4 pizzas as well. Homemade Fluffy Pizza with Pepperoni and Olives

Nothing like a homemade pizza, i still remember me asking my portuguese grandma to make me a pizza and she made me bread with tomato and cheese, it wasnt pizza but it was still great!!! ;D I know totally unrelated hehehe
Ingredients
- Flour – 500g (00 or T65)
- Sugar – 7g
- Baker’s Yeast – 10g
- Water – 330ml (+/-)
- Olive Oil – 13g
- Salt – 13g
- Buffalo Mozzarella Cheese – 120g
- Parmesan Cheese – To Taste
- Pepperoni – 12 Slices
- Black Olives – To Taste
- Tomatoes – 1 Can (200g Peeled)
- Garlic – 1 Clove
- Olive Oil – A Drizzle
- Oregano – A Pinch
- Pepper – A Pinch
- Salt – A Pinch
Directions
- Preferably, make the pizza dough the day before. In a large bowl, combine 100g of flour, 80ml of warm water (not too hot, preferably lukewarm rather than boiling), sugar, baker’s yeast, and olive oil. Mix a little until you have a small paste, then let it rest for about 10 minutes.
- Then add the remaining flour, water, and salt (because if you add the salt too early, it can affect the yeast), mix until you have a ball of dough, knead it a little until it is smooth and shiny (at least 10 min), then grease the bowl with olive oil and add the ball of dough, cover with a cloth, and let it rise for at least 1 hour.
- Once the dough has doubled in size, remove it from the bowl, knead it again, divide it into two balls (or four), place them on a baking tray, cover with a cloth, and refrigerate to rise slowly for 12 to 24 hours.
- When ready to make the pizza, preheat the oven to 200°C and place a pizza stone in the oven.
- Make the tomato sauce in a small saucepan by combining the tomatoes, olive oil, chopped garlic, oregano, salt, and pepper. Cook for about 5 minutes, then remove from the heat.
- Remove the dough ball from the refrigerator and roll it out on a silicone mat or non-stick paper.
- Add a few spoonfuls of tomato sauce, followed by mozzarella cheese (drain the excess moisture from it), pepperoni slices, olives, and sprinkle with grated Parmesan cheese.
- Bake for about 25 to 30 minutes until golden brown. Take it out and ready to serve! Bon appétit!

If you don’t have a pizza stone, flip a large baking sheet upside down and preheat it in the oven.
Less is more when it comes to pizza toppings – too many will make the crust soggy.
Pat the buffalo mozzarella dry with paper towels before using to prevent excess moisture.
The remaining dough balls can be frozen for up to 3 months. Just thaw in the refrigerator overnight before using.
Crush the tomatoes by hand for a rustic texture, or blend briefly for a smoother sauce, i like half cooked sauce, but you can use raw sauce directly on the pizza, it will have a less sweet more tangy flavour.
