Homemade Creamed Spinach with Turnip Greens is a traditional Portuguese side dish that offers a delightful twist on classic creamed spinach by incorporating turnip greens.

Try this variation of a classic creamed spinach with a bitter sweet hint of turnip greens, delicious.

Ingredients

  • Spinach – 1 Large Bunch (+/- 350gr)
  • Turnip Greens – 1 Small Sauce (+/- 100gr)
  • Garlic – 2 cloves
  • Butter – 1 Tablespoon
  • Flour – 1 Tablespoon
  • Cream – 100ml (Room Temperature)
  • Olive Oil – A few drops
  • Nutmeg – A pinch
  • Pepper – A pinch
  • Salt – A pinch

Directions

  1. Start by sautéing the chopped garlic with a drizzle of olive oil in a tall frying pan, letting the garlic brown a little.
  2. Then add the spinach and turnip shoots, season with a pinch of salt and cover the pan, note that you want a very large pile (you may have to put in two hands, let the spinach languish for a while and pour in the rest of the spinach and turnip shoots after the first batch had wilted).
  3. After about 5 minutes the spinach mixture should be cooked, remove it from the pan to a blender jug, let it cool down a bit and then blend it (be careful when blending hot liquids, they can splatter everywhere).
  4. In the same pan add the butter and flour, stir until you create a paste, then add the warm cream and mix well until you create a thick sauce, season with pepper, salt and a little nutmeg.
  5. Add the blended spinach back in and stir, let it cook a little longer until it thickens, taste and correct with salt and pepper and it’s done, enjoy!
Notes: If you don’t have fresh spinach or turnip greens, use frozen versions, just note that you don’t need as much frozen as fresh. You can also swap the cream for milk if you want a less rich version.

Also note that I did everything in the frying pan and then ground it up with a blender, because i think this makes a nicer creamier version than blending the greens still raw before cooking.

You can also change the olive oil with butter.
