You’ll find numerous sweet potato varieties, each distinguished by the color of their flesh—white, yellow, orange, or purple. The orange or purple-fleshed ones are the richest in Vitamin A.

  • Sweet Potato – 1

Directions

  1. Wash the sweet potato thoroughly under running water, using a brush to remove any remaining dirt.
  2. Pierce the potato about 6 times around (to prevent the potato from building up pressure, avoiding potential explosions).
  3. Dampen a piece of kitchen paper or a couple of paper towels and place it on a plate, then put the sweet potato on top. Wrap the paper around the potato to help it steam slightly and not become too tough on the outside.
  4. Microwave at full power for about 6 minutes, adjusting the time based on the size (smaller ones might need less time, larger ones perhaps 1 or 2 more minutes). Microwave for 3 minutes, then turn the potato over, and finish the remaining 3 minutes.
  5. Take it out of the microwave, slice it open, and serve it with a generous dollop of butter on top! Enjoy!
Notes: Experiment with different toppings like sour cream, chives, or a sprinkle of cinnamon for added flavor.
