Who doesn’t absolutely love peppers? They’re such a delicious and incredibly versatile vegetable, and one of the most delightful ways to prepare peppers is by roasting them. This way, they become tender and sweet and can be eaten just as they are or used in a whole series of recipes from pepper salads to fillings, mixed with roasted cheeses, or simply as a delicious side dish.

This is the classic way we roast peppers here in Portugal, a time-honored method that transforms ordinary peppers into something truly special. The simplest way to prepare roasted peppers is to start by roasting them on a grill or in the oven, with the goal being to cook the pepper flesh while simultaneously charring the outer skin. This traditional technique creates that distinctive smoky flavour that makes Portuguese roasted peppers so irresistible.

Omg roasted peppers are soooooo gooooodddddd, if i could have them everyday i would hehehehe, these way of cooking them is easy pretty fast and the results are flawless, give it a try.

Ingredients

  • Bell Peppers – To Taste
  • Sal – To Taste

Directions

  1. Start by making a small cut in the stem of each pepper and sprinkling a few grains of salt inside to season each pepper.
  2. Place the peppers on a baking tray in an oven preheated to 390ºF (200ºC) and leave them in until the skin is completely black and charred.
  3. Now remove them from the oven, place them in a bowl, cover with cling film, and leave the peppers to cool. The steam will help to loosen the skin.
  4. When the peppers are less hot, remove the cling film and then use your fingers to remove the burnt skin. Rinse the pieces of pepper underwater to remove any pieces of burnt skin that you cannot remove.
  5. And that’s it! You can now use the roasted peppers or store them in an airtight container in the refrigerator for 2 or 3 days without any problems. Enjoy!
Notes: The salt trick is genius, it not only seasons the peppers from the inside but also helps them release their natural juices, creating a more concentrated flavor.

Save that delicious salty liquid from inside the peppers! It makes an incredible salad dressing base or can be used to season other dishes.

For extra smoky flavor, you can also char the peppers directly over an open flame using tongs.

The plastic wrap step is crucial, don’t skip it! The trapped steam makes peeling so much easier.

If some stubborn skin bits won’t come off, don’t worry about getting every last piece. A few charred spots add to the rustic appeal and taste.

These roasted peppers freeze beautifully for up to 3 months, just pack them in freezer bags with a little of their own juices.

Try different pepper varieties, red bells give the sweetest result, while poblanos or Italian frying peppers add more complexity.

The recipe hasnt got quantity, because you can make 2 or 10 just as easily, however the calories/nutrition are for 2 peppers!
