Rustic Omelet with Creamy Pesto Spaghetti

This one is funny, almost not a recipe to share, the idea was a nice omelet but I…. just put too many things in it, enough to make it more difficult to fold into an omelette, that’s why I’m calling it… “rustic” hahahaha, so sorry! But that’s cooking for you! 😀

Still it was delicious, it’s a very cheesy omelet with some leftovers ham and chorizo and I had also the end of a pesto sauce, so I used that in the pasta, and I thought it was an easy simple meal that anyone can make at home, sure it might not look super fancy, but it was quick and delicious and sometimes that’s what hits the spot! Right! RIGHT! 😛 Let’s check the recipe!

Rustic Omelet with Creamy Pesto Spaghetti

This is cooking one /o/ one, you start with an idea and it starts to not go as planed so you pivot and make the best of it, sometimes it can be even better, this is not the case today hahahah, this recipe just one the taste taste, not the beauty test ;D

Ingredients

  • Spaghetti – 110gr (For 1 Person)
  • Eggs – 3 L
  • Pesto Sauce – 1 Tablespoon
  • Ham – 2 Slices
  • Chorizo – 3 Slices
  • Flamengo Cheeese – 2 Slices
  • Mozzarella Cheese – 50gr (Grated)
  • Olive Oil – A Drizzle
  • Pepper – A Pinch
  • Salt – A Pinch

Directions

  1. Start by cooking the pasta, on a big pot with water and a bit of salt, on medium heat, when the water is boiling add the pasta and let it cook until its tender (see the package for time recommendations), then drain and add the pesto sauce, coat it well.
  2. While the pasta is cooking, put a frying pan on medium heat with the diced ham and chorizo, frying them for a couple of minutes just to give them colour.
  3. While the ham is cooking, whisk the eggs with a bit of salt and pepper.
  4. When the chorizo and ham look good, put a drizzle of olive oil to coat the frying pan, lower the head and add the whisked eggs followed by the diced flamengo cheese and grated Parmesan cheese, let the egg cook.
  5. When the egg is cooked, try and flip the omelet with the aid of a spatula, it ok if you can’t, I couldn’t ;D that’s why its… rustic! Remember… it was all part of the plan.
  6. Cook the other side and then serve on a plate with the Spaghetti, that’s it! Enjoy!
Notes: Sometimes I add a bit of milk/cream to the eggs, but normally for scrambled eggs, for omelet I think it’s best to have just the eggs.

You can make a perfect omelet if you take half the cheeses or just add the cheeses in the filling and not inside the eggs, then you can make a nice looking omelet ;D
