Crunchy Coconuty Cookies, a delightful twist on classic portuguese cookies with a hint of coconut!


  • Flour – 320gr
  • Butter – 125gr
  • Sugar – 100gr
  • Egg – 2
  • Vanilla – 1 Teaspoon
  • Coconut – 60gr
  • Coconut – For Sprinkling
  • Salt – A Pinch


  1. Mix the flour, soft butter, sugar, eggs, vanilla, coconut, and a pinch of salt in a single bowl until it forms a consistent dough.
  2. Preheat the oven to 180ºC and prepare a baking tray lined with non-stick paper.
  3. Shape the dough into balls slightly larger than golf balls, try and make them all the same size so they will bake evenly, place them on the tray, and sprinkle each with a pinch of shredded coconut.
  4. Finally Bake for 20 to 25 minutes until they start to crack and turn golden at the edges. Take them out and let them cool a bit before diving in hehehe, enjoy!
Notes: For a tropical twist, add a dash of lime zest or chopped macadamia nuts (or any kind of nut) to the cookie dough. Love a more chewy texture? Substitute half the flour with coconut flour. These cookies pair wonderfully with a cup of tea or as a sweet surprise in packed lunches, the first day they are crunchy, but if you wait a day they become softer and creamier with time… if there are any left hehehe 🙂
