Hehehe lately I’ve been making a ton of pancakes, and I think it might be because my weekly routine is so predictable, especially in the mornings, so yeah every Sunday I find myself thinking, AHHHH I want something sweet, something comforting, and well pancakes are a easy to make, delicious, and super versatile, you can make them plain, with a ton of filling and toppings, its awesome!

This version is pretty simple. To make them a little fluffier I separated the eggs and whipped the whites into stiff peaks, and of course, just like the name says, I added apple slices into the batter of each pancake, and they turned out amazing! Which reminds me, does that make them apple pancakes or pancakes with apples? ;D This is also a great excuse to use up those apples that have been sitting around getting a little older, they will still work perfectly here.

Uhhhhh also as a side note, at least for me, eating a nice stack of pancakes in the morning is basically a brunch, I always end up so full for lunch that I only have room for something lighter, which honestly isn’t a bad thing for a change. Lets check the recipe!

Old Fashioned Fluffy Apple Pancakes with Honey and Butter

For me having a nice fluffy pancake on a Sunday morning... its the best way to start a Sunday, fluffy, sweet and comforting.

Ingredients

  • Apples – 2 (small) or 1 (large)
  • All-Purpose Flour – 250g
  • Eggs – 2 (large)
  • Milk – 300ml
  • Butter – 50g (melted)
  • Sugar – 15g (optional)
  • Baking Powder – 1 teaspoon
  • Baking Soda – 1/2 teaspoon
  • Salt – A pinch
  • Butter – For greasing and serving
  • Honey – For serving

Directions

  1. Combine the flour, baking powder, sugar, and salt in a bowl and mix well.
  2. Separate the egg yolks and whites into two bowls, and whisk the egg whites until stiff peaks form.
  3. Add the milk to the bowl with the egg yolks.
  4. Then, combine the flour mixture with the yolk mixture.
  5. Add the melted butter and baking soda.
  6. Finally, gently fold in the whisked egg whites to create the pancake batter.
  7. Peel the apples and cut them into thin slices. Heat a buttered skillet over medium heat, once hot, spoon in some batter and spread it to form a circle (don’t worry about making a perfect circle).
  8. While the pancake cooks, place apple slices on top.
  9. When bubbles start to appear, flip the pancake and cook the other side until golden brown, remove from the skillet, re-grease the pan with some butter, and repeat until all the batter is used up.
  10. Serve in a stack with butter, honey, chocolate, cinnamon, sugar, or whatever toppings you like. This recipe easily serves three people (about three pancakes per person, with one left over). Enjoy!
Notes & Tips: Also I thought about chopping the apples and folding them into the batter like chocolate chips or blueberries, but apples are super juicy, so mixing them straight into the batter would make the batter a bit too runny and the pancakes wouldn’t turn out as fluffy. No harm in trying it that way if you’d like, but I think they’ll just end up a little less light and airy ;D

I also froze the butter just so I could set a little butter rectangle on top of the pancakes without it melting right away, hehehe the magic of photography ;D

If your apples are on the softer, older side, this is actually a great way to put them to good use, they cook down beautifully under the batter and add natural sweetness and will lose the graininess.

Make sure your pan is truly at medium heat before the first pancake goes in, if it’s too hot the outside will brown before the inside sets, and if it’s too cool the pancakes won’t get that nice golden color.

Also, resist the urge to press down on the pancakes while they cook, that knocks out the air from the whipped egg whites and makes them denser instead of fluffy.

If you want a slightly more caramelized top, sprinkle a touch of sugar over the apple slices right after you place them, it’ll create a light caramel edge as the pancake finishes cooking, just note that if you do that, its best to clean the pan with some kitchen paper between each pancake or else they will start to burn and stick and you don’t want that.
